We are pouring wines from two major regions of Portugal: the Dão and the Douro River Valleys. The Douro, also home to Port wines, produces reds that are luscious, concentrated, and dense. The best examples have a line of firm tannins that allows them to age for 10–15 years or more. The Dão, with its granite soil, produces wines that are driven by minerality and structure.
Dão
The Dão viticultural region is in the north of the country. It takes its name from the Dão river, along which the majority of the region’s vineyards are located. The Dão is a tributary of the larger Mondego and several other rivers also flow through the region. However, only the Dão is significant enough to have the local DOC named after it – mostly due to the tough, crystalline granite that the river has carved its path through for many millennia, which gives the wines their minerality and structure.
Arguably, the finest red wines from the Dão today are deep reds made from Tinta Roriz and Touriga Nacional. White wines are also produced in Dão, with the finest examples based on Encruzado, the region’s most widely planted light-skinned grape variety. Traditionally, white wine from the region has been full-bodied and lush.
Douro
Terraced vineyards on sun-baked slopes plunging down to the wide, slow-flowing Douro river as it winds towards the great Port houses in Porto and Vila Nova de Gaia…the Douro region of northern Portugal is the photogenic home of Port and, increasingly, a number of powerful, dry red wines often made from the same native grape varieties. The Douro’s most unifying trait is its mountainous terrain, although the area covers a broad array of terroir with any number of different aspects, altitudes and soil types. Typically, however, the vineyards stretch up the steep, dry slopes on either side of the river and its myriad tributaries on narrow rocky terraces – a sight that has been classified as a Unesco World Heritage site. Wines tend to be full-bodied, fruit-forward and structured.
Rui Roboredo Madeira’s’s roots are in the Douro Superior. As a young winemaker, Rui was instrumental in converting to organic agriculture, improving processes, and focusing on producing high quality estate wines (Quinta do Coa) and sublime CARM extra virgin olive oil. In 2011 Rui decided to depart from the family business and move to the village of Vermiosa on Portugal’s eastern border with Spain and on a high-altitude granitic plateau (800m+). Here, converting an old run-down winery, Rui started Beyra. Here, Rui works exclusively with indigenous varieties and local clones, Tinta Roriz, Jaen, Touriga Nacional, Siria, and Fonte Cal, well adapted to this environment of extremes. Beyra Branco has aromas of peach, lemon, and mayflower. The palate is rich with minerals, grapefruit, and vibrant acidity. Pairs well with shellfish, fatty fish, and goat cheese. $18.99
Textura Dão Pretexto Branco, Dão, Portugal
Varietals: Encruzado, Bical Alc. 12%
The Dão is unique. Resistant to the Atlantic influence that characterizes so many of Portugal’s wine regions, this little enclave of viticulture exists to defy expectations. One of the projects highlighting the possibilities within the region is Textura. Begun in 2018, the project pulls from over 20 hectares of organic vineyards within two subregions: Castendo and Serra da Estrela. At Textura, winemaker Luis Seabra shows a commitment to low-intervention practices that have served him well. He works with varieties like Encruzado, Arinto, and Gouveio that deliver vibrant wines full of character. In Dão, like so many regions of Portugal, the blend is key. The wines here are all about harmony. The floral and tea aromas, citrus, and orchard fruits like pear all emerge in wines like Pretexto. Pairs well with grilled fish, roasted chicken. $29.99
Quinta do Ribeiro Santo Tinto Riserva
Varietals: Touriga Nacional, Alfrocheiro, and Tinta Roriz, Alc. 12.5%
The Quinta do Ribeira Santo is an ancient property once belonging to the Catholic Church and featuring one of the few perennial streams in the area, the Holy River, the Ribeira Santo. Owner and winemaker Carlos Lucas has over 25 years of experience in the cellars of Portugal, Spain, and southern France. His father bought and renovated the hacienda and vineyards of the ancient Quinta do Ribeiro Santo property in the Dao wine region, a mountainous territory, mostly on a high-altitude plateau surrounded by the higher mountains of the Serra da Estrela, Serra do Caramulo, and Serra da Nave in 1995. He handed the reins to Carlos in the 2000s. Carlos now makes complex and compelling wines from the indigenous varieties planted on the property. Pinha Tinto Reserva is a blend of Touriga Nacional, Alfrocheiro, and Tinta Roriz. Destemmed and fermented in stainless, then racked over to 225l French
oak barriques to finish fermenting, racked into oak for an additional 9 months ageing before bottling. Deep red color with touches of purple, black fruit and spices, from pepper to vanilla. Velvety and long. Ages well. Pairs well with Cuban-spiced pork and beans, barbequed beef, Gruyere cheese, black beans and lentils. $19.99
With a history of 900 years, Quinta das Herédias was one of the properties founded by the Cistercian Monastery of São Pedro das Águias, in the spirit that presided over the Order of St. Bernard: to populate and cultivate areas that were donated to the monastery. Later, these same properties were leased by the monastery to families of the region, some of them nobles. It was the last descendant of the Herédia family, D. Leonor Amália Falcão Sarmento, who was the first owner of the estate, after the extinction of the religious orders in 1834. Since 2021, Quinta das Herédias has been owned by Carlos Lucas. Located in the demarcated Douro region, in the municipality of Tabuaço, this farm has 108 hectares, of which 30 hectares are vineyards and 35 hectares are olive groves. The vineyards, aged between 30 and 130 years old, are located between 200 and 600 meters above sea level and produce an average of 220,000 bottles per year. Herédias is young and complex at the same time, with notes of red fruits present. In the mouth it is elegant, with good structure and good volume in the mouth. A wine with some complexity and acidity, and a long and persistent aftertaste. Pairs well with grilled steak, venison, and other game. $19.99
Quinto do Casal Monteiro Clavis Aurea, Tejo, Portugal
Quinta do Casal Monteiro produces estate wines from Portuguese and international varietals planted on about 200 acres of vineyards, located on the Campo terroir directly along the Tejo (Tagus) River in Portugal’s Tejo wine district. The winery was founded on the legacy of Dom Luis de Margaride, who inherited the estate in 1928 and devoted his life to the study of viticulture in the Tejo River valley – one of the oldest wine regions on the Iberian Peninsula. When the current generation of the family took the reins in 1979, they modernized the winery and returned the vineyards to a more natural form of management, including replacing pesticides with integrated pest management (IPM, biocontrol through natural predators). Today, the Quinta produces a range of terrific wines showcasing the best of the Tejo district’s bright fruit and clean style. Clavis Aurea is a blend of Touriga Nacional, Touriga Franca, and Cabernet Sauvignon from 30-year old vines. This is a rich, velvety wine. Brilliant deep garnet in color, with aromatic hints of red ripe fruit, jelly, black plums and cocoa on the nose. On the palate it is powerful and velvety with an intense and persistent finish. Pairs well with roasted meat, aged cheese. $24.99

Savour Wine & Cheese l 76 Prospect St. l Gloucester l 978. 282 .1455
This Saturday, January 27, Chris Hoffman from Oz Wines, a local Rockport native, will be pouring some great wines: 2 new – a French Chenin Blanc and a Spanish Treixadura for the whites, then 3 favorites: a luscious Pinot Noir, a classic Portuguese red from some of the oldest European vines we know of, and a deep, earthy, full-bodied Crozes Hermitage from the Northern Rhone Valley.
Les Pierres Ecrites Montlouis-sur-Loire Petits Boulay, Loire, France
Varietal: Chenin Blanc Alc. 13.8%
Originally from the Loire-Atlantic part of France, Coralie and Anthony Rassin worked in various wines regions in France and abroad before settling in the appellation Montlouis. Here they took up the challenge to run their own vineyard and winery. In late 2015, they acquired the Montlouis estate Domaine Flamand Deletang in St Martin Le Beau in its entirety. They renamed it Domaine Les Pierres Ecrites to make a new start while also giving a nod to the prior owner, whose grandfather was a famed archeologist of prehistoric drawings on stones in North Africa. Their main cuvée was called “Les Pierres Ecrites.” The Rassins practice minimal intervention winemaking: indigenous yeasts, no fining, minimal or no filtration. Organic certification came in 2021. The wines are vegan. Petits Boulay offers classic Chenin aromas of sweet pear, apricot, and peach fruit imbued with crystalline clay-chalk minerals. Buoyed by laser-like acidity and riveting tension, suggestions of crisp quince, bee pollen, honeysuckle, and fennel appear on the fore-palate before broadening and gaining flesh mid-palate to add notes of pear and apple. Long, zesty, and bone-dry finish. Pairs well with seafood, charcuterie, and cream sauces. $21.99
Bodegas El Paraguas Atlántico Blanco, Ribeiro, Spain
Varietal: 92%Treixadura, 8% Albariño Alc. 13%
Launched in 2011 by Galician wine professionals Felicísimo Pereira (enologist) and Marcial Pita (grower), Bodegas El Paraguas is located in Ribadavia, where the Pereira family has cultivated their 1-hectare vineyard since 1892. The old vines lie next to the Avia River, a favorable setting which naturally shelters them from extreme weather conditions, hence the winery name “El Paraguas” (“umbrella”, in English). Felicísimo and Marcial work with a mix of high elevation sites and conduct vineyard work manually while using a minimalist approach to their winemaking. One of Pereira’s specialties has been mining the countryside for nearly forgotten grape varieties and bringing them into the conversation of Galician wines. Bodegas Paraguas works exclusively in Ribeiro and principally with the white grape variety Treixadura. They veer on the side of picking early and working with a mix of high elevation sites. They also work to respect nature by not using herbicides or pesticides, and doing everything by hand (or horse, in the case of plowing). The stunning results of their high-elevation and early picked wines closely resemble a wine from Burgundy’s Côte d’Or in weight and complexity, but remain true to the taste of the Ribeiro, with honeyed citrus blossoms, saltiness, and white fruits. The Blanco has notes of honey, sweet citrus, stone fruit, dried herbs, and wet stone. Pairs well with bacalao, sushi, and salads. $34.99
Barrique Pinot Noir, Sonoma Coast, California
Varietal: Pinot Noir Alc. 14%
Barrique’s Sonoma Coast Pinot Noir encompasses cool-climate vineyards in the Russian River Valley, Sonoma Coast, and Carneros AVAs. The blend also includes fruit from the Roses Estate Vineyard on Olivet Road, which is near icons like Martinelli. Once harvested, the fruit is gently transferred by gravity to open-top fermenters, where it was fermented with 33% whole clusters for added depth and structure. The resulting wine balances brightly focused and intriguing fruit, with velvety yet firm tannins and lovely acidity. Deep red in the glass, the nose is full of ripe huckleberry, cedar, and vanilla spice. The texture is plush with a broad mouthfeel. Flavors of blackberry compote, fig jam, and caramelized sugar round out a long finish. Pairs well with pork, stews, mushroom dishes. $24.99
Domaine Des Hauts Chassis Crozes-Hermitage Les Galets, Rhone, France
Varietals: Syrah Alc. 13%
Domaine des Hauts Châssis is a 12-hectare estate in the middle of Les Hauts Châssis” in the south of the Crozes Hermitage appellation area. It has been in existence for three generations. The current owner, Franck Faugier, has been the winemaker since taking over the family’s vineyards in 1998 and making the decision to leave the local co-operative and go out on his own. He is the fourth generation of his family to tend to their vines in the commune of La Roche-de-Glun in Crozes-Hermitage, however all the previous generations sold their grapes to either Paul Jaboulet Aîne or the Tain Cooperative. Franck’s 12 hectares of Syrah vines grow on the stony, red-clay and sandy soils of Les Châssis — one of the most prized plots of land in all of Crozes-Hermitage — with three hectares planted in the 1930s and another four planted in the 1950s and 1960s. He works his vines as naturally as possible, using biodynamic farming methods to ensure the health of his soil and plants. From these stony soils, Franck is able to craft expressive, juicy Syrah that drinks with fabulous freshness, complexity and fruit intensity. Les Galets has a bouquet of black cherries, violets, licorice, smoky nuances, and black olives. The palate is wonderfully mouth-filling, juicy, fresh, and youthful with good-bodied tannins. Pairs well with roast lamb, winter soups, and grilled ribs. $34.99
Adega Regional de Colares Chão Rijo Tinto, Lisboa, Portugal
Varietals: Castelão and Tinta Roriz Alc. 12.5%
The Colares Regional Winery, founded in 1931, is the oldest cooperative winery in the country. It currently comprises the majority of growers in the Demarcated Region of Colares, which is a very tiny region just west of Lisbon in the town of Sintra. It is run now by oenologist Francisco Figueredo, who has done more than anyone in the last few years to keep (or put back) Colares on the map. The region has a long history and is the second oldest demarcated wine region in Portugal, dating back to 1908, with records of wine production dating back to the days of the Roman Empire. The region has gone from being the center of the wine world in the early 1900s with several hundreds of hectares under vine, to having less than 20 hectares of vines today. Urban sprawl has been the main contributor to this devastation as real estate for development has influenced many growers to sell their plots since their kin are disinterested in carrying on with the farming. Farming here is extremely labor intensive. There has never been a proper trellising systems in place. Vines were, and still are, planted individually by digging several meters below the sand to reach the clay, allowing vines to settle and grow as they are planted 300 meters away from the Atlantic Ocean. The vines grow in a circular way out of the ground. When the grapes form, canes sticks are used to elevate the grapes, preventing them from touching the ground. Colares is famous for the red grape Ramisco, which is capable of aging for several years, as well as the white grape Malvasia. The Tinto is light bodied, high in acidity, firmly structured, and very mineral, with flavors of tart red fruit and saline. Pairs well with paella, grilled meats, and roasted vegetables. $14.99

This Saturday, Savour’s staff: Kathleen, Morgan, and Ann will be offering several value-priced favorite blended wines. Blends are a wonderful buy because they allow for the creativity of the winemaker and often highlight the best grapes of a particular vintage. This is why blended wines can taste quite different from year to year. Try these remarkable blends from France, Washington state, South Africa and Portugal. You are sure to find something you’ll enjoy, priced from $14.99 – $29.99.
This white blend from Plaimont winemaker Cedric Garzuel has a complex nose of citrus fruits (preserved lemon and grapefruit) and passion fruit from the Colombard combined with the notes of white-fleshed fruits and quince brought by the Sauvignon. The crisp palate is faithful to the Gascon terroir. There is a powerful explosion of tropical fruits on the palate and a full-bodied, tasty finish. Pairs well with fish, sushi, and mild cheeses. $14.99
As early as 1634, in Rochefort, the ancestors of Jean Baumard were already cultivating vines; plots of land that are still on the property. The arrival of Jean, a professor of viticulture and oenology at the École Supérieure d’Agriculture et de Viticulture in Angers, in 1955 marked the founding of the present wine estate. After training as an oenologist in Dijon and Bordeaux, he began to expand the vineyard by acquiring vineyards in the prestigious appellations of Anjou. Jean’s son Florent joined the family business in 1987. Expression of the terroir and technical mastery are the watchwords of the estate. The result is elegant wines with an explosion of aromas. La Calèche has aromas of pears, lemons, peaches, and honey, with floral and mineral hints. There is great tension on the palate, which is persistent and precise. It is dry, with well-balanced acidity and great structure. Pairs well with salads, fish, chicken. $17.99
Rasa Vineyards Occam’s Razor, Columbia Valley, Washington
Varietals: Syrah, Cabernet Sauvignon, Grenache, Merlot, Cabernet Franc Alc. 14.7%
Brothers Billo and Pinto Naravane founded Rasa Vineyards after dreaming of making wine for many years while they both worked in tech. In 2006 Billo applied to the UC Davis Master’s Program in Viticulture and Enology and was only one of 10 people selected that year. In 2007, the brothers made two wines, both of which scored above 94 points in the press, and Rasa Vineyards was on its way! The name Occam’s Razor refers to the heuristic attributed to William Ockham, which states that given all things are equal, the simplest answer tends to be the correct answer. This Occam’s Razor has a rich aroma of blackberry, cassis, and spice, on the palate densely layered flavors of black cherry blend with tobacco, cedar, and cocoa. It has structure and refinement and a luxurious, weighty texture. Pairs well with pot roast, braised lamb, pasta with Bolognese sauce. $22.99
Rustenberg Stellenbosch John X Merriman Red Blend, South Africa
The Rustenberg Estate was founded in 1682 and is nestled in the valley of the Simonsberg Mountain in South Africa’s premium wine region. The estate stands on an impressive 880 hectares against the Simonsberg Mountain in Stellenbosch. In 1941 Peter and Pamela Barlow bought Rustenberg. Their son Simon took over the running of the farm in 1987. Simon’s son, Murray, joined in the running of the farm with his father in 2012. The Barlows have been at Rustenberg for over 80 years: the longest period any one family has owned the farm. Rustenberg makes a range of wines that typify the regions within which they are produced. Predominantly consisting of, but not confined to, Bordeaux varietals, these wines are made to represent the ideal regionally and varietally specific styles brought out through a blend of traditional and modern viticultural and winemaking techniques. $29.99
Van Zellers Douro Red, Douro Valley, Portugal
Varietals: Field Blend of 30+ varieties, Alc.15 %
Founded as a port wine company in the early 17th century, Van Zellers has 15 generations of experience in crafting the world’s most exceptional ports. Now Van Zellers, like other producers in the Douro, has turned to making unfortified wines. “All our grapes were foot trodden in open air tanks for 1 to 3 days before fermentation and then fermented in stainless steel vats for 7 to 10 days. We estimate that there are over 30 different varietals in this wine.” The Douro Red is complex and structured, oak-aged for 26 months after undergoing full malolactic fermentation. Full-bodied and velvety, it has aromas of dark fruits and wild berries. On the palate, it is fruity, spicy, and full. Pairs well with game, veal, mushroom dishes. $29.99

Kathleen’s Food and Wine pairing App, Insta-somm™
“A Sommelier in Your Pocket”
(patent pending)
Insta-somm™ is the first objective systematic method of pairing food and wine, based on the science of molecular gastronomy. Foods are matched with the wines that share the same molecular structure. The dominant flavor molecule is represented by a color: green, yellow, red, orange, and blue. Each wine is assigned a number and then paired with foods that match their level of acidity, from bone-dry (level 1) to sweet (level 4).
Yearly subscription available for $39.00 (Click on Visit Now on the home page of Savour’s website). You can purchase a subscription as a gift and try one yourself!) We offer a free one-week trial when you sign up, so give it a go and explore. I will be teaching a series on the app in late February.

WINES
Greywacke, New Zealand
Varietal: 100%v Sauvignon Blanc, Alc. 13.5%
Greywacke (pronounced Greywacky) is the Marlborough label of the Judd family and the name of New Zealand’s most abundant bedrock. These understated grey river stones are found throughout Marlborough’s rivers and alluvial vineyard soils. Established in 2009, Greywacke is truly a family affair and while the company now exports its wines all over the world, the ethos is very much ‘keep it simple and hands-on’ with a small, dedicated team running the company from Greywacke HQ in the heart of Marlborough’s Omaka Valley. The fruit is sourced from mature vineyards in prime viticultural sites to optimize the potential afforded by Marlborough’s sunny South Pacific climate. All vineyards are sustainably managed with substantial and increasing proportions coming from organically farmed sites. Crop levels are restricted to enhance concentration of flavor and a long, cool growing season produces fruit with incredible varietal intensity and bright, natural acidity. Meticulous canopy management regimes are employed to provide sufficient fruit exposure to deliver ripeness of flavor, textural richness and optimum acid balance. Greywacke is accredited with AMW status (Marlborough appellation).
The fruit was sourced from several prime vineyard sites in Marlborough’s Southern Valleys and the central Wairau Plains (specifically Woodbourne, Renwick and Rapaura). Soil types vary from the young alluvial soils of Rapaura and Renwick, which contain high proportions of New Zealand’s ubiquitous greywacke river stones, to the older and denser clay-loams of the Southern Valleys. The wine has aromas of cassis and passionfruit, with guava, crisp pear and white peach adding a delicious fruit salad intricacy. On the palate, it’s generous yet refreshing, with ripe pineapple and a lime sherbet zing, layered with elderflower and hints of citrus blossom. A classic example of Greywacke’s interpretation of the famous Marlborough style – ripe, textural and scrumptious – with the volume turned well down. Pairs well with goat cheese, asparagus, herbed salads and pastas as well as Mexican food. $24.99.
2020 Kiralyudvar, Hungary
Varietal: 100% Tokaji Furmint Sec (dry), Alc. 13%
When Anthony (Tony) Hwang loaded his family in the car and drove northeast from Budapest in 1997, he could hardly have imagined where the road would lead. A Tokaji Aszú inspired the trip that a sommelier had recommended the previous evening. The wine made such an impression that Tony felt he had to learn more about it. For what Tony craved most in wine, this bottle offered in spades—a profound identity and razor-sharp balance.
Just a few months after his visit, Tony purchased what was perhaps the region’s crown jewel, Királyudvar (Kee-RYE-oohd-var)—which for centuries had supplied Imperial wine to the Hapsburgs. Tony also owned the Loire Valley’s greatest Vouvray producer, Domaine Huet. The deep well of institutional knowledge there began to inform many decisions at Királyudvar, particularly a conversion to biodynamic viticulture.
This innovative dry wine balances Furmint’s viscous intensity and bright acidity in an electrifying, versatile white wine. It exhibits delicate floral aromas, citrus fruit flavors and fine acidity that come together in a long focused mineral finish. Pairs well with Asian dishes, Mexican food, and spicy or salty dishes and cheese. $27.99
Giornata Il Campo Rosso, Pasa Robles California
Varietals: Sangiovese, Barbera, and Aglianico, Alc. 13%
Giornata is owned and run by Brian and Stephanie Terrizzi. They focus on making authentic, complex, and balanced wines in Paso Robles, CA, featuring Italian grape varieties such as Sangiovese, Nebbiolo, Barbera, and Fiano.
Brian’s love for Italian wine stems from his lifelong love of Italian food and fascination with his Italian heritage. After working for respected Zinfandel producer Rosenblum Cellars, he traveled to Italy to work with the famous Paolo DeMarchi at Isole e Olena in Tuscany. This experience led to a desire to make Italian wine in California. Stephanie Terrizzi’s interest in wine was sparked while working at a wine bar in Illinois. She moved to Sonoma County, and while managing and building the wine programs for Ca’Bianca and Sassafras restaurants, she obtained a certificate in enology and then headed to Fresno to pursue a degree in Enology, Chemistry, and Plant Science from Fresno State. There, she met and soon married Brian.
Giornata Il Campo Rosso is made with a blend of Sangiovese, Barbera, and Aglianico grapes. With aromas of black cherry, oregano, and slate and a similar flavor profile on the palate the wine is blended to display a signature house style. Il Campo Rosso marries bright fruit and fresh acidity with a richly textured, medium-weight body. Neutral oak and large Italian casks allow the bright fruit to shine. It has a food-friendly, easy-drinking style, and pairs well with dishes like pasta pomodoro, margarita pizza, and burgers. $24.99
2018 SHILDA Winery Mukuzani Red, Republic of Georgia
Varietals: 100% Saperavi, Alc. 12.5%
The Shilda Winery is a family owned and operated winery with the perfect blend of tradition and modernity. The ultramodern winery constructed in 2015 is packed to the brim with the latest French and Italian winemaking technology, brought to bear on the ancient grape varieties and varied terroirs of the Kakheti region. Shilda is a beautiful village dating to the 14th Century located on the foot of the southern slopes of the Caucasus Mountain range, facing south into the valley of the Alazani River, on the northern flank of the Kakheti wine region, in the Kindsmarauli Protected Designation of Origin (PDO).
Mukuzani (Saperavi) is from the Mukuzni micro-zone within Kakheti, grapes come from the best vineyards, selected for the terroir, vineyard age, and yield per hectare, among other factors. The grapes are harvested exclusively by hand to ensure their protection and integrity. This wine is oak-aged for several months and develops greater complexity with time. The wine is dark ruby red, with pleasant aromas and a velvety palate of black currant and dried red fruits, followed by a long and balanced finish. Pairs well with hearty beef stew, Barbequed pork, pizza and cheese-stuffed pasta. $14.99
Edmeades 2019 Mendocino County Zinfandel, Varietal: Zinfandel, Alc.15%
In 1963, Dr. Donald Edmeades, a Pasadena cardiologist, planted grapes in the tiny hamlet of Philo, in the Anderson Valley, making him the first modern-day grower to do so in that remote stretch of western Mendocino County. His son, Deron, began Edmeades Winery in 1972. It quickly gained a reputation for lusty, mountain Zinfandels that won gold medals and high scores from critics. In fact, Edmeades helped launch the fame of these intense, hillside Mendocino Zins. The 2019 Mendocino County Zinfandel begins with concentrated aromas of baking spices including cinnamon and cloves, which give way to aromas of blackberries, black currants, and dried sage. The texture is round, and the fruit expression is focused and lush. Subtle and integrated tannins accentuate the richness of the wine, while pleasant acidity keeps it fresh on the finish.
Pairs well with barbecued chicken, eggplant Parmesan, winter stew, char-broiled burgers. $19.99

WINES
Domaine Latour-Giraud Chardonnay, Burgundy, France
Varietal: Chardonnay, Alc. 12%
Domaine Latour-Giraud estate owns an impressive range of Premier Cru and Villages vineyards between 20 and 50+ years old, including the largest parcel of Meursault Genevrières, as well as Puligny-Montrachet Champs Canet and vineyards in Pommard, Volnay, Maranges and Mersault Caillerets. The history of Domaine Latour-Giraud extends over three centuries. In the 1990s, Jean-Pierre Latour became the winemaker, bringing a cultural revolution to the estate with the adoption of organic agricultural practices and reduced yields to 25-35 hectoliters per hectare. Investments were made in new pneumatic presses, crusher-destemmers, and temperature controlled stainless steel fermenting tanks. Jean-Pierre ferments only free run juice with wild, natural yeasts. The wines are aged on their lees and are fined, but not filtered, and bottled by hand. Unlike many producers who bottle all their wines at once, Jean-Pierre carefully monitors each wine and bottles at the optimal time over a 6-month period. Jean-Pierre’s whites are classic Burgundies: intense and concentrated, stylish and powerful, layered and balanced. This wine bursts with juicy melon, bright citrus and succulent stone fruits; white flowers and spice complete the beguiling nose. Refreshing acidity enlivens the palate and gives this wine an appealing texture and a lingering, satisfying finish of delicious, ripe flavors. Pairs well with rich fish dishes, scallops, dishes with cream sauces or mushrooms. $ 32.99
Marco Felluga Mongris Pinot Grigio, Collio Italy
Varietal: Pinot Grigio, Alc. 13%
The Collio is a land with a deep-rooted vocation for viticulture. The Fellugas are a family that, for six generations, has been passing on and cultivating its passion for wine. The family’s history can be traced back to more than 150 years ago, in the second half of 1800, in Istria, Croatia. In the next generations, the family extended its wine business into Italy. In 1956, Marco Felluga founded the company that bears his name in Collio. Roberto Felluga, fifth-generation winemaker, has always based his work and approach on sustainability; adopting innovative processes, supported by national and international research, aimed at the production of high-quality wines with reduced environmental impact; respect for the land, its history and traditions. Following these principles, Roberto Felluga started producing white wines that can be both appreciated when young or after several years of aging in the bottle, when they develop hints of ripe fruit balanced with unique mineral complexity. The Felluga Mongris is a golden yellow color with copper hints. It has an intense aroma with pronounced hints of acacia flower, broom and apple. It has an elegant, fruity, full-bodied and structured taste and a long finish. Pairs well with salads, light pasta dishes, risotto with scampi. $ 19.99
Casa de Mouraz Branco, Dao, Portugal
Varietals: Malvasia-Fina, Bical, Encruzado, Cerceal, Rabo de Ovelha, Uva Cão, Fernão Pires and others, Alc. 12%
Casa de Mouraz takes its name from the monastery of St. Pedro de Mouraz, built by the Cistercians in the 12th century when they planted the first vines where the winery now stands. Antonio Lopes Ribeiro and his wife, Sara Dionisio, are the force behind Casa de Mouraz; both gave up successful careers in the London art world and returned home to take over Antonio’s family vineyards (some 34 acres). They converted the vineyard to the first certified organic vineyard of the Dao in 2000 (and they have since converted to biodynamic as well). The small estate is planted to some 30 different indigenous varietals. The Branco is made from grapes from old vines (50 years+) planted on 8 hectares. All grapes are hand-harvested in the second week of September, de-stemmed, with no time on skins and spontaneous fermentation for the last two months with indigenous yeasts. The wine spends approximately three months on lees and is aged for 9 months. On the nose, the Branco has balsamic aromas with notes of citrus peel, melon, pear, and roses. On the palate, it is fresh mineral, and full-bodied, with a long, refined finish. The wine is certified organic and biodynamic. Pairs well with ceviche, Portuguese seafood stew, salmon. $22.99
Ponzi Vineyards, Willamette Valley, Oregon
Dick and Nancy Ponzi moved their young family to the Willamette Valley in the late 1960s with a spirit of adventure and a passion for making world class Pinot Noir. After many research trips to Burgundy and an extensive search for the ideal location, they purchased 20 acres on a small farm just southwest of Portland, Oregon. It was a daring risk: at the time, the Pacific Northwest was not thought to be a place to grow Pinot noir, but Dick and Nancy realized the Northern Willamette Valley’s climate was ideal for cool climate varieties. Pinot noir cuttings were planted, and in 1970 Ponzi Vineyards was founded. In 2021, Ponzi was acquired by the venerated Champagne producer Bollinger, bringing new opportunity and investment to the brand. With Luisa Ponzi (Dick and Nancy’s daughter) still at the winemaking helm, the founding spirit of Ponzi Vineyards is as alive as ever. We will be tasting two of Ponzi’s wines.
Ponzi Laurelwood Chardonnay
Varietal: Chardonnay, Alc 13%
The 2021 Laurelwood Chardonnay is a blend of Ponzi’s LIVE Certified Sustainable Avellana and Aurora Vineyards blended with Paloma Vineyard, all on Laurelwood soil in the Laurelwood District AVA of the Chehalem Mountains. The inviting nose balances fresh floral notes of honeysuckle, chamomile, and magnolia with deeper tones of apricot, candied lemon, and beeswax. A touch of slate and wet stone energizes the aromatics. The mouth is layered with white peach, quince, meringue, lemon grass, and a thread of salted caramel throughout. The juicy acidity tinged with minerality. Pairs well with halibut, shrimp, scallops. $31.99
Ponzi Laurelwood Pinot Noir
Varietal: Pinot Noir Alc. 13.5%
This classic New World expression of Oregon Pinot noir features nuances and flavors that are a hallmark of the region’s varied soils and cool climate. Using Ponzi’s most established vineyards at its base, Laurelwood Pinot Noir is blended with Pinot Noir from throughout the Laurelwood District AVA. The nose shows beautiful spice notes of black pepper, nutmeg, and mesquite with floral aromas of lavender and dried rose petal. Ripe blueberry, raspberry and blackberry bramble mingle throughout. The mouth mimics the nose with spice notes, maple, black cherry reduction, and dried sage. Chocolate nibs, malt, and cinnamon frame the sweet mid palate with juicy acidity, and the wine finishes with long, dusty tannins. Pairs well with grilled steak, duck, Brie. $49.99.
Gravel Bar Cabernet Sauvignon, Columbia Valley, Washington
Varietal: Cabernet Sauvignon, Alc. %14.5
For more than twenty centuries, torrential floodwaters from melting ice-age glaciers sculpted eastern Washington’s Columbia Valley, leaving in their wake deep deposits of sandy, rocky, alluvial soils. Today, framing the Columbia River, broad plains of ancient sediment constitute one of the world’s finest wine grape growing regions. This Cabernet is full bodied, with a great balance between fruit and herbal notes. It is subtle and elegant, yet concentrated and complex, with black cherry and raspberry, currant, plum and mocha, with hints of fennel and mint. Full and structured tannins hold it all together. Pairs well with braised short ribs, pork tenderloin, roasted lamb. $21.99

WINES
Champagne Demière-Ansiot Brut Blanc de Blancs Grand Cru, France
Varietal: Chardonnay Alc.12%
Based exclusively in the Grand Cru village of Oger in the Cote des Blancs south of Epernay, site of Champagne’s most famous Chardonnay terroirs, Demière-Ansiot is a discreet but renowned producer of grower Champagne. The 3.5 hectare estate’s primarily south-east orientation ensures optimal maturity for the vines which average 40 years in age, seated on chalk soils emblematic of the region. Their primary objective is offering Champagnes of an average age of 7-10 years without sacrificing acidity, hence no malolactic fermentation occurs during vinification. The Brut Blanc de Blancs Grand Cru rests 30 months on lees, double the minimum for a non-vintage Champagne, following which the bottles sojourn a minimum of 6 years in the domain’s cellars before commercialization. Only the greatest of vintages are vinified apart, thus the Brut non-vintage benefits from the greatest vines of the domain and is in no wise a ‘second wine’. A modest 4g/L dosage provides for a supremely fresh wine, full of pear, pastry and citrus, equal to accommodating the noblest of shellfish or caviar. $64.99
Cave de Turckheim 2018
Alsace, France
Varietals: Pinot Blanc, Auxerrois, Alc. 13.5%
A blend of Pinot Blanc and Auxerrois as often are Alsacian bottles labeled as Pinot Blanc, this wine, from a particularly strong vintage, is at its apogee. The Cave de Turckheim, an important producer in Alsace, has been certified organic for well over a decade, and vinifies every variety of wine present in Alsace, much of it from estate-owned plots. Produced on sandy soils, with apple, pear and peach notes on the nose and a bright acidity, this wine will accompany a host of aperitif, seafood, white fish and pork based dishes with equal success. $ 18.99
Domaine de l’Enclos 2021
Chablis, Burgundy, France
Varietals: Chardonnay, Alc. 12.5%
Spread over 29 hectares on either side of the river Serein, Domaine de l’Enclos has been certified organic (Ecocert) since 2005. Two brothers, Damien and Romain Bouchard, own and manage this domain run out the monks’ quarters of the former Abbey of Pontigny, producing wines in every echelon of appellation in Chablis (Petit-Chablis, Chablis, Premier Cru and Grand Cru). The harvest is entirely manual. Since 2016, the domain benefits from its underground chais, from whose pneumatic press the sole runoff vinifies in stainless steel, fermented using only indigenous yeasts. 18 months of aging follow in stainless steel and barrels. The AOC Chablis derives its origin from 15.3 hectares spread over the towns of Chablis, La Chappelle and Beine. Both fruity and mineral, on the fleshier side for Chablis, this wine will accompany oysters, baked white fish and other similar fare now or anytime in the next five years. $32.99
Bernard Magrez ‘La Destinée de Clément V’ 2018, Chateauneuf-du-Pape, Southern Rhone Valley, France
Clément V was the first of the Avignon Popes, and also the owner of the Chateau which bears his name in Pessac-Léognan in the Bordeaux region, now the most famous property of Bernard Magrez. In honor of this pope, under whose efforts the court of Avignon spurred the rise of the southern Rhone’s greatest terroir, Mr. Magrez has inaugurated his own production at Chateauneuf-du-Pape, producing both red and white wines under the appellation. Both are eminently age-worthy; the 2018 white is drinking quite well already. Brilliant minerality from a multi-parcel selection balances ample substance for a brilliant pairing for the widest array of seafood, from shellfish to bluefish, or indeed with roast veal. $69.99
Chateau Pipeau 2019, Saint-Emilion Grand Cru, Bordeaux, France
Now in their 4th generation of ownership, the Mestreguilhem family guides this 25-hectare domain, producing one single wine. Limestone and clay soils, vines averaging 40 years of age, combined with optimal viticultural practices to concentrate maturity (green harvest, leaf-thinning), result in a decadent, powerful Saint-Emilion Grand Cru ready to drink within a few years. Fermentation occurs in steel and concrete, aging in partially new oak. A decade’s cellar stay possible, decanting obligatory. A noble cut of beef, big game, or indeed lampray in sauce bordelaise should do the trick. $44.99
Tenuta Carretta ‘Cascina Bordino’ 2016
Barbaresco Riserva, Piedmont, Italy
Varietals: Nebbiolo Alc. 14%
Tracing its origins in 1467, Tenuta Carreta in Piobesid’Alba is a venerable estate to the north of Alba, encompassing 80 hectares in total. The 3.5 hectares composing their Barbaresco Riserva come from the town of Treiso on steep, well-exposed hillsides comprised primarily of sand and marl soils. Long maceration (10-12 days) extracts a wealthy sensory material in color and aroma, which 36 months of tonneau and large-barrel aging then refine and harmonize. Violet, rose and ripe fruit with spices characterize the bouquet, which red meat and big game will accompany with dignity. $59.99

FINE WINE TASTING @ SAVOUR WITH MARC BERGERON OF MASCIARELLI WINES
The Masciarelli Wine Company is a family-owned business focused on importing and distributing only the finest quality limited-production wines. Their diverse portfolio of artisanal wines is distributed in 27 states to 31 wholesalers throughout the United States.
Masciarelli Wine Company strives to deal directly with the winery whenever possible and seek out small estates producing high-quality wines that would be overlooked in larger brand-driven portfolios. Marc has many years of experience in the wine business and is both passionate and knowledgeable.
When many people think of Italian white wine, Pinot Grigio is the first that comes to mind, and with good reason. Pinot Grigio is the most imported variety of wine in America. Fans of Pinot Grigio can expect a light-bodied, delicate white wine that is a natural pairing for light dishes such as appetizers, salads, or fish. Although Pinot Gris is indigenous to Burgundy, it is now grown in many wine regions all over the world. It is perhaps most commonly associated as coming from Italy, where it is produced in large quantities. Known in Italy as Pinot Grigio, it is grown throughout Northern Italy, but is most commonly found in Veneto, Umbria, Trentino, Emilia-Romagna, and Friuli. It is one of the main wines of the Collio. The Scolaris Pinot Grigio is straw yellow in the glass. It has an elegant and complex bouquet, with notes of fresh, exotic fruits and acacia flowers together with a hint of bread crust. On the palate, tangy acidity accompanies ripe pear and lemon drop candy. Pairs well with oyster, fish, Brie. $ 17.99
Foris Pinot Gris, Rogue Valley, Oregon
Varietal: Pinot Gris, Alc.14%
In 1974, Ted Gerber, owner of Foris Vineyards, began growing grapes, and in 1978, he started selling them commercially to wineries across the Pacific Northwest. Then in 1986, Foris Vineyards began producing wine, and decades later, its wines are enjoyed in 44 states, four Canadian provinces, and even Japan. Foris wines are defined by the uniqueness of the Illinois Valley, home to the estate vineyards and winery. A part of the western most reaches of Southern Oregon’s Rogue Valley Appellation, the valley is distinctive in its alpine attributes. Gerber found that Alsace white varieties are especially well suited to the vineyard’s microclimate. On the nose, this Pinot Gris has notes of Honey Crisp apples, Bartlett pear, and green papaya mingled with scents of toasted almonds and coconuts. The wine spreads across the palate with a rich texture; bright acidity and freshness from fermentation in stainless steel which gives the wine a little verve. Pairs well with salmon, roast chicken, shellfish. $19.99
Clos de RochersAuxerrois2021, Luxembourg
Varietal: Auxerrois, Alc.12.5%
The Domaine Clos des Rochers estate has been owned and managed by the Clasen family since the 19th century. The 16 hectares of vines belonging to the Domaine are spread across the best slopes of the villages of Grevenmacher and Wormeldange as well as in the village of Ahn. The vines are exclusively planted with noble varieties: Auxerrois, Pinot Blanc, Pinot Gris and Riesling. Auxerrois (or Pinot Auxerrois) is a white wine grape variety with a perplexing number of synonyms. True Auxerrois, often called Pinot Auxerrois or Auxerrois Blanc, is grown fairly extensively in Alsace and appears in more wines than most may realize. The origin of Alsatian Auxerrois remains unclear; it shares the same spelling as a town in Chablis, but is pronounced differently. Outside France, it is grown in Germany, Austria, Italy and Luxembourg and there are also a handful of plantings in North America and South Africa. The Clos de Rochers Auxerrois is acidic and lively, with floral and citrus notes. On the palate it has a mineral and saline quality. Pairs well with fish, poultry, egg-based dishes. $21.99
Bodegas Ondarre was founded in 1985 in Viana in the heart of Rioja, by the Limousin Ucin family, who wanted to develop the concept of a terroir wine in a zone with a unique style, determined by the diversity of soils and the arrangement of the small and ancient vineyard plots on slopes climbing up towards the Sierra de Codés. The character of Bodegas Ondarre wines comes from its soils. That’s why, once the best plots have been selected for making its stable of wines, the grapes are harvested by hand. On the sorting table any berries which do not meet thee required quality standards are removed and then vinification takes place in the traditional way, using new French-oak (25%) and American Missouri-oak barrels 75%).The Ondarre Reserva Rioja pours an intense cherry-red color. There are aromas of oak and spices on the nose. On the palate, intense leather and vanilla join ripe strawberries and red cherry. The wine has well-integrated tannins and a long finish. Pairs well with pork, barbecued beef, aged cheeses. $ 19.99
Winemaker Dominique Lauret grew up in Bordeaux, often passing by the Pindefleurs property, which has a history that dates back to the 17th century. Lauret worked with his brother at Chateau Pipeau until 2006, when he bought the Pindefleurs property. He set about renovating the Carthusian monastery, constructing a new winery, and installing new vinicultural equipment. Chateau Pindefleurs has become a family operation now that Lauret’s daughter, Audrey, and his son, Pierre, have joined him. Saint Emilion is revered for its finely crafted and utterly delicious blended red wines, most commonly made by blending together wines made from Cabernet Sauvignon, Cabernet Franc and Merlot varietal grapes. The Chateau Pindefleurs Saint-Emilion pours a deep red, with aromas of cherry, plum, and cedar on the nose. On the palate, it has juicy raspberry and boysenberry preserve flavors, along with ample anise, roasted apple wood, and black tea notes. Pairs well with prime rib, smoked duck breast, slow-cooked leg of lamb. $42.99

FINE WINE TASTING @ SAVOUR WITH MORGAN DOWNS, SAVOUR’S NEWEST STAFF MEMBER AND FRENCH WINE EXPERT
WINES
Domaine Barmès-Buecher 2021
Alsace, France
Varietal: Pinot Blanc Alc. 13.5%
Situated in the village of Wettolsheim, at the foot of the hills beneath the Vosges mountains, Domaine Barmes-Buecher’s 17 hectares of vines lie south of Colmar and Turckheim and produce an average of 100,000 bottles and around twenty different cuvées every year. The Domaine grows a number of Alsatian grape varieties and its production is split over seven different terroirs, three of which are classified as Grand Cru.
The Pinot Blanc is a golden color, and the nose has aromas of minerals and flint along with some peach. Pineapple and orange, lemon, pepper, and clove are present on the palate. The fruit is luscious and weighty, but the wine also has good acidity and a clean mouthfeel. Clay and limestone with some sandstone, primarily north and east-facing, give life to old vines of Pinot Blanc on this terroir. These noble soils make a short to medium-term cellar stay quite appropriate for this wine, though not obligatory. Ripe, full, crisp and dry all at once, eminently suitable for aperitif, white baked fish, simple Asian cuisine. $32.99
Eminent estate of the left-bank created by the late Denis DUBOURDIEU (the ‘Pope’ of dry white Bordeaux). Spread over 25 hectares of limestone plateau in Pujols-sur-Ciron, adjacent to Barsac (famous appellation for sweet wines), Semillon heads the vineyard’s varietal list (53%), followed by Sauvignon Blanc and a small dose of Muscadelle. (15 additional hectares are devoted to the elaboration of red and rose cuvees). Tight but full-bodied, but with agreeable acidity which sustains buttery notes, pine-nut, white truffle and herbaceous undertones. Lovers of white wines from Burgundy, the Rhone Valley, and of course classic, old-fashioned white Bordeaux have reason to be satisfied. Veal, chicken, turkey, fish with Sauce Beurre Blanc will elicit harmony from this wine, preferably decanted one to two hours before serving. Ten years in the cellar will amply reward the patient.
Champagne Drappier Brut Rosé, France
Varietal: Pinot Noir Alc.12.5%
Preferred Champagne producer of the General De Gaulle, pillar of the Aube subregion, Drappier have excelled since their inception in 1808 at producing robust Pinot Noir-based Champagne in the town of Urville, on the site of a former Benedictine monastery founded by Saint Bernard of Clairvaux. Several days of maceration confer depth of color and character to this rich Champagne. Modest Brut dosage rounds out the edges without dulling freshness. Strawberry, violets, and discrete spices entice and command attention. Be similarly generous and serve it at mealtime with guinea fowl or roast turkey. $64.99
Château du Hureau ‘Tuffe’ 2020, Saumur-Champigny, Anjou, France
Varietal: Cabernet Franc Alc.13.5%
15 parcels drawn from across the towns of Saumur and Dampierre, all comprised of the famous ‘tuffe’ limestone emblematic of the soils, cellars and Chateaux of ‘white Anjour’ and the middle Loire provide the basis for this accessible Saumur-Champigny. 100% Cabernet Franc vinified and aged primarily in stainless steel. Dark berries and wet underbrush with hints of tobacco bely the small pretensions of this delicious wine, full of finesse. Opened several hours in advance, it will ravish your palate accompanying a rare steak, pheasant, or the delicious silence of a fire-warmed November evening. $21.99
Bergerie du Capucin ‘Dame Jeanne’ 2019
Pic-Saint-Loup, Languedoc, France
Varietals: Syrah, Grenache, Mourvedre Alc. 14.5%
Drawn from 12 hectares in one of the Languedoc’s great appellations (3 additional hectares are devoted to white wines) this is a rich, smooth, and elegant red wine. With 70% Syrah rounded out by 15% Grenache and Mourvedre respectively, the depth of color is attractive indeed. Faithful to the traditional character of the terroir, the wine exhibits aromas of black pepper, garrigue, wild berries and violets in abundance, with a cool acidity redeeming the solar circumstances of its fruition. Lamb, beef, or indeed well-seared white meats, prepared with rosemary and thyme would be most appropriate. $32.99
Tenuto di Biserno ‘Il Pino di Biserno’ 2015
Toscana Rosso, Italy
Varietals: Cabernet Franc, Merlot, Cabernet Sauvignon, Petit Verdot Alc. 14.5%
From the Tenuta di Biserno, an estate created in 2001 in the Upper Maremma adjacent to Bolgheri comes this sturdy wine. At 90 meters above sea-level, seated on mostly limestone soil with some clay and stone with generous calcium deposits, coming to fruition in a maritime climate, all elements of this wine’s terroir indicate the setting for a brilliant expression of Bordeaux varietals in the Super-Tuscan style. A bold, powerful wine requiring big-game, steak or duck, preferably accompanied by a truffle, foie gras or mushroom sauce. Multiple decades in the cellar remain for those who prefer the merits of age. Decant vigorously. $74.99
And don’t forget to check out what’s new in our beer case, including two juicy NE IPAs and a clean, refreshing rice lager from East Regiment Brewing, a veteran-owned brewery in Salem and a crisp new lager and a smooth, refreshing kolsch from Rockport Brewing.

Champagne- Jean-Noël Haton Blanc de Blancs, Champagne, France
Varietal: Chardonnay Alc. 12%
Founded in 1928 by cooper Octave Haton, Champagne Hatonis is located in the Marne Valley, 7 kilometers from Epernay in the village of Damery. An independent family owned Champagne house, they have a deep history in Champagne dating back to the 1610s as grape growers. Father and son Jean-Noël and Sébastien (third and fourth generation), currently own 25 hectares of vineyards, manage an additional 15 from viticulture to vinification, and purchase grapes for a volume equal to 20 hectares across Champagne, including Grands Crus and Premiers Crus. Champagne Haton was one of the first Recoltant Manipulant producers (a type of producer that tills the soil, plants their own vines, grows the grapes, and bottles and sells their own Champagne) and continues to be one of the top 10 most important winegrowing families still managing their own domain. The House has been sustainable (certified HVE 3) since 2021, in their vineyards. The Haton Blanc de Blancs pours a pale golden color, with a wide, continual string of fine bubbles. The nose is floral and refined, revealing aromas of rose and acacia blossom. With aeration, citrus fruits (mandarin- orange), cinnamon, a few notes of dried flowers, roasted coffee and a hint of toast emerge. It is fresh and creamy on the palate, well-balanced with pleasing floral and honeyed notes, and a gentle and elegant finish. Serve as an aperitif. Pairs well with salty snacks, seafood. $ .44.99
Clendenen Family Vineyards, Santa Maria, California
Jim Clendenen had already collected countless honors and accolades for his Au Bon Climat wines when he created the Clendenen Family Vineyards label in 2000 as a vehicle to bring many of his most artisanal and experimental wines to market. All are produced in very small quantities; many of these wines are crafted from unique varietals grown primarily on his organically farmed Le Bon Climat and Rancho La Cuna Vineyards. The project has expanded to include special plantings at Bien Nacido Vineyard as well. While two of the jewels from this project are Chardonnay and Pinot Noir, he also makes benchmark examples of Nebbiolo, Tocai Friulano, Viognier, Petit Verdot, Sauvignon Blanc, and a Syrah/Viognier blend. This week, Harry is pouring three wines from Clendenen.

Varietals: Mondeuse Alc. 13.5%

Dead Canyon Ranch 2019 Red Blend, Horse Heaven Hill, Washington
Varietals: Cabernet Sauvignon Alc. 14%
For over 125 years, Mercers have been stewards of the same land in Washington’s Horse Heaven Hills. In 1972, they planted the first wine grapes in the acclaimed Horse Heaven Hills AVA. Now, their vineyards span 12,000 acres along the Columbia River. Dead Canyon Vineyard bears the name of the topographical landmark on which it resides. Grapes are planted along both canyon edges, about three miles south of the original Mercer family farmstead. The site has two distinct aspects because it is planted on both canyon edges, and thus has both a north and south face. The Dead Canyon Ranch Cab Sauvignon has notes of smoke, black currant, green pepper, oak, vanilla and plum. Sweet matchstick pastries and plum flavors follow, backed by tightly coiled, slightly dry tannins. Full body, velvety tannins, a subtle blackberry finish. Will benefit from a short decant if drinking in the near term. Pairs well with grilled beef or pork, lamb chops, meaty stews. $19.99
The Médoc appellation comprises a wide variety of soil types, including sand, gravel, clay, stones and pebbles. The wines of the Médoc are all produced by blending different grape varieties. Located in Begadan, on the west side of the Medoc peninsula, the Château Courbian is owned by Marie-Christine and
Claude Greteau. The estate takes its name from the hamlet of Courbian, dating back from the 18th century. Originally in polyculture (cereals), the vineyard has been the only focus for the past hundred years, producing a single cuvée.This wine offers a bouquet of red and black berries currant with roasted coffee notes and a touch of vanilla. The palate is full with a velvety texture and round tannins. Pairs well with roast lamb, venison, duck. $ 24 .99
