Champagne- Jean-Noël Haton Blanc de Blancs, Champagne, France

Varietal: Chardonnay Alc. 12%

Founded in 1928 by cooper Octave Haton, Champagne Hatonis is located in the Marne Valley, 7 kilometers from Epernay in the village of Damery. An independent family owned Champagne house, they have a deep history in Champagne dating back to the 1610s as grape growers. Father and  son Jean-Noël and Sébastien (third and fourth generation), currently own 25 hectares of vineyards, manage an additional 15 from viticulture to vinification, and purchase grapes for a volume equal to 20 hectares across Champagne, including Grands Crus and Premiers Crus. Champagne Haton was one of the first Recoltant Manipulant producers (a type of producer that tills the soil, plants their own vines, grows the grapes, and bottles and sells their own Champagne) and continues to be one of the top 10 most important winegrowing families still managing their own domain. The House has been sustainable (certified HVE 3) since 2021, in their vineyards. The Haton Blanc de Blancs pours a pale golden color, with a wide, continual string of fine bubbles. The nose is floral and refined, revealing aromas of rose and acacia blossom. With aeration, citrus fruits (mandarin- orange), cinnamon, a few notes of dried flowers, roasted coffee and a hint of toast emerge. It is fresh and creamy on the palate, well-balanced with pleasing floral and honeyed notes, and a gentle and elegant finish. Serve as an aperitif. Pairs well with salty snacks, seafood. $ .44.99

Clendenen Family Vineyards, Santa Maria, California

Jim Clendenen had already collected countless honors and accolades for his Au Bon Climat wines when he created the Clendenen Family Vineyards label in 2000 as a vehicle to bring many of his most artisanal and experimental wines to market. All are produced in very small quantities; many of these wines are crafted from unique varietals grown primarily on his organically farmed Le Bon Climat and Rancho La Cuna Vineyards. The project has expanded to include special plantings at Bien Nacido Vineyard as well. While two of the jewels from this project are Chardonnay and Pinot Noir, he also makes benchmark examples of Nebbiolo, Tocai Friulano, Viognier, Petit Verdot, Sauvignon Blanc, and a Syrah/Viognier blend. This week, Harry is pouring three wines from Clendenen.

Clendenen 2020 Pinot Gris

Varietal: Pinot Gris, Alc.13.5%

The Pinot Gris has stone fruit aromas and a rich, full body with juicy peach and nectarines notes and a spicy ginger note on the finish. Pairs well with sushi, salads and fresh vegetables, shellfish. $27.99

Clendenen 2021 Mondeuse Rosé

Varietal: Mondeuse Alc.12%

This charming wine has just a hint of blush color and shows delicate aromas of ripe wild strawberry and pomegranate. It is light, crisp and dry with a really subtle fruit character and flinty notes. Truly elegant. Try this wine as an aperitif, or match with Parisian chicken salad, quiche Lorraine, or sushi. $19.99

Clendenen Mondeuse

Varietals: Mondeuse Alc. 13.5%

This French varietal creates a delicious, juicy red wine with deep color and a berry/peppery flavor. Blackberry, plum, pomegranate appear up front with nuances of clove and black olive on the back palette helping to create a savory and food-friendly wine. Its intriguing fruit character makes it enjoyable now. Enjoy with grilled burgers, hearty stews or cassoulet.$22.99

Dead Canyon Ranch 2019 Red Blend, Horse Heaven Hill, Washington

Varietals: Cabernet Sauvignon Alc. 14%

For over 125 years, Mercers have been stewards of the same land in Washington’s Horse Heaven Hills. In 1972, they planted the first wine grapes in the acclaimed Horse Heaven Hills AVA. Now, their vineyards span 12,000 acres along the Columbia River. Dead Canyon Vineyard bears the name of the topographical landmark on which it resides. Grapes are planted along both canyon edges, about three miles south of the original Mercer family farmstead. The site has two distinct aspects because it is planted on both canyon edges, and thus has both a north and south face. The Dead Canyon Ranch Cab Sauvignon has notes of smoke, black currant, green pepper, oak, vanilla and plum. Sweet matchstick pastries and plum flavors follow, backed by tightly coiled, slightly dry tannins. Full body, velvety tannins, a subtle blackberry finish. Will benefit from a short decant if drinking in the near term. Pairs well with grilled beef or pork, lamb chops, meaty stews. $19.99

Chateau Courbian Medoc, Bordeaux, France

Varietals: 65% Merlot, 35% Cabernet Sauvignon Alc.14

The Médoc appellation comprises a wide variety of soil types, including sand, gravel, clay, stones and pebbles. The wines of the Médoc are all produced by blending different grape varieties. Located in Begadan, on the west side of the Medoc peninsula, the Château Courbian is owned by Marie-Christine and

Claude Greteau. The estate takes its name from the hamlet of Courbian, dating back from the 18th century. Originally in polyculture (cereals), the vineyard has been the only focus for the past hundred years, producing a single cuvée.This wine offers a bouquet of red and black berries currant with roasted coffee notes and a touch of vanilla. The palate is full with a velvety texture and round tannins. Pairs well with roast lamb, venison, duck. $ 24 .99

And don’t forget to check out what’s new in our beer case, including two juicy NE IPAs and a clean, refreshing rice lager from East Regiment Brewing, a veteran-owned brewery in Salem and a crisp new lager and a smooth, refreshing kolsch from Rockport Brewing.

COMPLIMENTARY

FINE WINE TASTING @ SAVOUR WITH GORDON ALEXANDER, OWNER OF TERROIR WINES

_________________________________________________________

“A vineyard’s terroir is what makes each wine unique. It is everything that contributes to the distinction of a vineyard plot. It determines which grape varieties will thrive there. The best winemakers help the grapes to express their uniqueness, without technical intervention or heavy processing.”

” Terroir Wines is dedicated to the principle that place matters. We work with winemakers around the world that cherish their land, produce wines that express the sense of place, and that work with minimal intervention in the vineyard and the cellar. Most are organic, some biodynamic, all sustainable. Our wines are as unique and individual as their makers… and their terroir.”

WINES

Stift Klosterneuburg Grüner Veltliner Brut NV, Austria

Varietal: GrünerVeltliner Alc.12%

The Klosterneuburg wine estate was founded in 1114, when, as legend has it, during the wedding, his bride’s wedding veil was blown off by a gust of wind; Leopold vowed to build a monastery where the veil was found. That spot became the Klosterneuburg Monastery, a religious and cultural center, and the location around which Stift Klosterneuburg has been making wines for more than 900 years. In the modern era, Stift Klosterneuburg is a pioneer in sustainability and climate protection; in 2009 it became Europe’s first carbon-neutral winery. The Grüner Veltliner Brut pours nearly clear with frothy, medium-sized bubbles. Aromas of green apple, pears, and lemon zest mingle with a subtle white pepper note. On the palate, pear and apple mingle with peaches and give way to a dry, yeasty finish. Pairs well with seared tuna and sushi. $19.99

Coquille Blanc 2021, Paso Robles, California

Varietals:30% Grenache Blanc, 30% Roussanne, 30% Viognier, 10% MarsanneAlc.13.5%

When winemaker Carol Shelton was 6, her mother developed an “identify the scent” game using herbs and spices out of their kitchen cabinet. It quickly became apparent that Carol not only possessed a great sense of smell, but that she was remarkably adept at figuring out the new smells as the game evolved. As Carol recalls, “it was probably the beginning of my path into the wine industry.” After an Enology degree at UC Davis, Carol worked for more than 20 years for several legendary winemakers. In 2000, at the urging of her husband, Carol decided to start her own winery. Carol continues to meticulously handcraft her wines with creativity and passion. Her Wild Thing label denotes that the wine is produced using the wild yeasts found on organically grown grapes. The Coquille Blanc is a complex alternative to the more one-dimensional white varietal wines like Chardonnay and Sauvignon Blanc. On the nose, aromas of spicy pears, white peaches, and marzipan, mix with a touch of honeysuckle perfume. In the mouth it is crisply dry yet creamy, round and full-bodied, with nice almond paste on crisp-yet-juicy pear fruit. Pairs well with Thanksgiving sweet potato dishes and seafood in creamy white sauce. $29.99

Castro Ventosa Bierzo Mencia Joven, Bierzo, Spain

Varietal: Mencia Alc. 14%

Castro Ventosa was founded by the Perez family in 1752 and the family has owned the estate ever since. The Perez family owns 75 hectares of Mencía vineyards in Bierzo, making them the biggest owners of this varietal within the Bierzo D.O. The Bierzo appellation is made of 5,000 hectares with 2,500 planted with white varietals and 2,500 planted with Mencía; there are 5,000 landowners within the appellation. Raúl Pérez, who now runs the winery, is a figurehead for Bierzo wines in Spain. Castro Ventosa produces three different Mencía; Valtuille, El Castro de Valtuille and El Castro de Valtuille “Joven Mencia.” Mencía is indigenous to Bierzo, and some suspect that it is an ancient clone from Cabernet Franc. When it comes to the grape Mencia, Raul Perez is obsessive; no detail is overlooked in his quest to accurately express the purity of true Mencia in the region. Fermented in stainless steel tanks and then left in oak vats for 3 months, the wine produced is fresh and without a ton of oak characteristics despite the malolactic fermentation. On the nose, herbal notes are mixed with wild berries. On the palate, it is medium-bodied and fruit forward with notes of graphite and good acidity.

Pairs well with venison, poultry, or veal. $17.99

Quinta do Ribeiro Santo Tinto Riserva

Varietals: Touriga Nacional, Alfrocheiro, and Tinta Roriz, Alc. %12.5

The Quinta do Ribeira Santo is an ancient property once belonging to the Catholic Church and featuring one of the few perennial streams in the area, the Holy River, the Ribeira Santo. Owner and winemaker Carlos Lucas has over 25 years experience in the cellars of Portugal, Spain, and southern France. His father bought and renovated the hacienda and vineyards of the ancient Quinta do Ribeiro Santo property in the Dao wine region, a mountainous territory, mostly on a high-altitude plateau surrounded by the higher mountains of the Serra da Estrela, Serra do Caramulo, and Serra da Nave in 1995. He handed the reins to Carlos in the 2000s. Carlos now makes complex and compelling wines from the indigenous varieties planted on the property.  Pinha Tinto Reserva is a blend of Touriga Nacional, Alfrocheiro, and Tinta Roriz. Destemmed and fermented in stainless, then racked over to 225l French

oak barriques to finish fermenting, racked into oak for an additional 9 months ageing before bottling. Deep red color with touches of purple, black fruit and spices, from pepper to vanilla. Velvety and long. Ages well. Pairs well with Cuban-spiced pork and beans, barbequed beef, Gruyere cheese, black beans and lentils. $19.99

Bernard Magrez L’Aurore de Gascogne Le Douceur de Vignes, Gascony, France

Varietal : Gros MansengAlc. 12%

Gascony is the region in southwest France that sweeps south from the Bordeaux region down to the Pyrenees Mountains and the Spanish border. The Cotes de Gascogne appellation is slightly inland, nestled behind the pine forests of Les Landes, 5,000 square miles of former marsh, moor and dune-field that was stabilized with maritime pine tree plantations in the early 1800s. Born in Bordeaux in 1936, Bernard Magrez left school at 16 to begin trading wine. Over the decades, he has built a formidable firm owning no less than forty-three individual domains, including several of Bordeaux’s most famous Crus Classes. In fact, he is the only individual to own 4 separate Cru Classe Chateaux. Today Magrez has properties now all over the world, and a yacht racing team. At Magrez’ estate in the Cotes de Gascogne, he produces two wines, both made from 100% Gros Manseng. The dry version is a classic Cote de Gascogne, dry, crisp, and clean. The Aurore de Gascogne Le Douceur de Vignes, however, is his masterpiece from this estate: lightly sweet, with heady floral aromas and a long delicate finish. Pairs well with a lunchtime picnic, afternoon fruit and cheese board, or to accompany a cheese selection after dinner. $17.99

Georgian Legend “Qvevri” Rkatsiteli Amber, Kakheti, Georgia

Varietal: Rkatsiteli Alc. 13.5%

Georgian Legend LLC was founded in 2011 to craft fine Georgian wines and brandies. The company’s goal is to protect, preserve and promote Georgian culture and its deep traditions of unique wines and top-quality brandies. One of the unique aspects of traditional Georgian winemaking is that it’s been at the vanguard of “natural winemaking” for 8000 years. Open-top fermentation with natural yeasts; almost no physical or chemical manipulation; minimal racking and no need for filtration… basically no sulfites added to the reds and a bare minimum for the whites. This wine, from the Tsinandali zone in Kakheti, is completely naturally made, using the ancient Qvevri method of fermentation in deeply-buried Qvevri (large fired-clay amphorae lined with beeswax), allowing for a long, slow fermentation and gentle, controlled oxidation to create the unique tangy style of amber wine. In the glass, the wine is a medium-amber color. It has notes of fresh fruit and herbs, and a long, tangy, mineral-driven finish. It is a perfect introduction to amber (or orange) wines. Pairs well with salads, meat barbeque and other meat dishes of Caucasian and Central Asian cuisine. $21 .99

WINES

Cantine Jasci Trebbiano d’Abruzzo, Abruzzo, Italy

Varietal:  Trebbiano, Alc. 13.5%

Located on the hills that rise 250 meters above sea level from the Adriatic Sea just above the seaside resort town of Vasto in Abruzzo, the Jasci family has been growing grapes and producing wine for three generations. In the early 1960s, Pasquale and Maria turned the focus of their farm to growing grapes and to producing estate wines. In 1980, their son Giuseppe made the prescient choice to convert the farm to organic, becoming one of the first ten wineries in all of Italy to be certified. The family wasn’t on the cutting edge, rather Giuseppe’s wife Irma had been suffering from health problems that doctors couldn’t solve. As the farm was converted to organic, her health problems were resolved. Forty years later, Cantine Jasci continues to be a leader in the production of organic wines. Jasci is one of a growing number of small producers who have turned Abruzzo into a great source for exciting wines. Its Trebbiano d’Abruzzo is made out of the high-quality Trebbiano Abruzzese grape, rather than the more run-of-the-mill Trebbiano Toscano. Straw yellow, this elegant wine has gentle peach and yellow plum flavors that are not too dry. This form of Trebbiano grape produces attractively light and fresh wines, when left to shine following fermentation and lees ageing in stainless steel. Pairs well with antipasti, pasta with pesto, lightly smoked meat, and ham.$15.99

 Sepp Grüner Veltliner, Vienna, Austria

Varietal: Grüner Veltliner Alc. 12.5%

Zum Martin Sepp is a small restaurant and inn located in Grinzing, a little town on the northern outskirts of Vienna. Michael Martin produces wine for the inn at Weingut Martinshof, their winery in the Weinvirtel. For generations, the region has supplied wine almost exclusively for the Viennese market, with little or no export to other countries or even other parts of Austria. Martin is one of the most dedicated winemakers you’ll find. His passion for the Grüner Veltliner grape is boundless, and he turns that passion into some of the freshest and tastiest Grüner around. The wine is made using organic practices and aged in stainless steel. It is light and lively on the nose with great citrus fruit aromas. There are bright green apple fruit notes mixed with great minerality and a vibrant acidity. The finish is crisp and clean. Pairs well with salads, shellfish, and fried chicken. $21.99 (1 liter)

Jean-Max Roger Sancerre Les Caillottes, Loire, France

Varietal: Sauvignon Blanc, Alc.% 12.5%

The Roger family descends from a long line of winegrowers from the village of Bué. The first written mention of the name dates back to the 17th century. Until the 1960s, generation after generation practiced mixed farming and animal rearing — the husband would look after the vines while the wife would care for the goats. Jean-Max Roger took over the 4 hectares of vines that his parents had left to him in the early 1970s. With his wife, Nicole, they focused on the vineyards and developed the estate to make it what it is today. In 2004, sons Thibault and Etienne joined their father at the family estate. This Sancerre is a blend of grapes from plots in the villages of Sancerre and Vinon that fully expresses the stony calcareous “caillottes” terroir it hails from. Fruity freshness, finesse, vivacity, and minerality characterize this wine. It is expressive, combining notes typical of the varietal (rhubarb, broom),floral (hawthorn), and fruit (grapefruit, lemon). Starts off bold on the palate offering dense structure and well-balanced acidity with lemony accents. The long finish is evocative of fresh fruit. Pairs well with crustaceans, shellfish, raw or cooked fish, poultry, goat’s milk and blue cheeses. $39.99

Bobal Estenas, Utiel-Requena, Spain

Varietals: % Alc. 13.5%

Vera de Estenas Bobal, located in Utiel-Requena, Spain was founded in 1945 by Francisco Martinez Bermell. Vera de Estenas has been crafting wines from their 47 hectares of estate fruit in Utiel-Requena, the home of Bobal. Situated at 800m elevation at the mouth of the Estenas river near the foot of the Sierra del Remedio mountains, the vineyards run northwest to southeast along a broad swath of calcareous clay soils. The brilliant diurnal shift in temperature, from high heat during the day to chilly temperatures at night helps to preserve acidity in the grapes. The result is a medium-bodied wine made with native yeasts, with bright black and red fruits, spice, and minerals, with balanced acidity. Fermented in concrete tanks, and aged for 8 months, 1/2 in used oak, 1/2 in concrete tanks. All organic practices. Pairs well with turkey, smoked meats, rabbit, Manchego cheese, and Paella. $15.99

Auntsfield Single Vineyard Pinot Noir 2020, Marlborough, New Zealand

Varietal: Pinot Noir, Alc.14 %

Auntsfield Estate’s original vineyard was established in 1873, and was the first colonial winery in Marlborough, New Zealand. Auntsfield is renowned for producing hand-crafted, high-quality Pinot Noir, Sauvignon Blanc, and Chardonnay. All the grapes the winery uses grow in the vineyards they own. The 2020 single vineyard Pinot Noir pours a deep ruby. Rich black cherry and plum fruit mingles with violets and complex savory aromas of dark chocolate, almonds, and cigar box. On the palate, this wine is silky and full, with flavors of ripe berry fruit and dark plum. Powerful yet refined tannins gives a plush texture with seamless length. Wonderfully composed and drinkable now, it can be aged up to 10 years. Pairs well with veal, coq au vin, roasted pork loin, or prime rib. $39.99

FINE WINE TASTING @ SAVOUR WITH TORI SEPAVICH OF CAPE CLASSICS

_________________________________________________________

We have a wonderful tasting for this Saturday, featuring the impressive wines of Cape Classics from South Africa, featuring my favorite white and red varietals, Chenin Blanc and Cabernet Franc. While glorious in their place of origin, these wines obtain a purity and depth in South Africa unique to their own terroir. Come join us and Tori as we celebrate and enjoy these treasures.

Cape Classics

Behind every farm, winemaker, bottle and grape lies an untold story. Collectively, we discover these tales and share them with our customers. Demanding authenticity, Cape Classics operates the “old-fashioned” way, with relationships and social responsibility at the forefront of our business. The wineries we represent embrace sustainable eco and social practices, doing their part to help preserve lands for future generations while improving the human condition now. Our wines are expressive, crafted with passion and perspective, and delivered with the same hallmark levels of service and professionalism since 1992.

WINES

Bayten Sauvignon Blanc, Cape Town, South Africa

Varietal: Cabernet Sauvignon Alc. 13%

The Bayten estate is situated on east-facing slopes of the Constantia berg mountain, just south of Cape Town

and a few short miles from False Bay. This cool-climate coastal area is renowned for elegant white wines that possess an intense minerality. Bayten was established in 1769, when Arend Brink purchased the farm, built a manor house and began planting vines. The property changed hand many times over

the years. In 1981, the Mueller family purchased the estate and began to replant the vineyards and restore the estate to its former glory. Current proprietor Lars Maack constructed a modern wine cellar featuring state-of-the-art winemaking equipment and a temperature controlled barrel maturation area with a capacity of 3,000 barrels. Today Bayten has earned a reputation as the source of some of South Africa’s most exquisite, mineral-tinged white wines. The Bayten Sauvignon Blanc is crisp and zesty with  textbook aromas and flavors of green fig, gooseberry, and lime. Grassy herbal notes are supported by elegant underpinnings of mineral and chalk. Pairs well with oyster, fresh crab, simply grilled fish. $14.99

Raats Old Vine Reserve Chenin Blanc, Stellenbosch, South Africa

Varietal: Chenin Blanc Alc.13%

Founded in 2001, Raats Family Wines is focused solely on crafting world class Chenin Blanc and Cabernet Franc, best known as the premier grapes of France’s Loire Valley. The boutique winery has quickly established itself as a New World leader in the production

of these two varietals, garnering tremendous critical acclaim and a dedicated fan base. Proprietor and winemaker Bruwer Raats firmly believes that South Africa’s proliferation of older Chenin Blanc vineyards provides a unique opportunity to craft terroir-driven wines that serve as international benchmarks for the varietal. The Raats Old Vine Chenin is rich and intense and   strikes a perfect balance between elegance and power. It exhibits luscious flavors of honeyed pear, fig, and citrus, with concentrated, mouthwatering minerality. Appealing hints of ginger and spice carry through on the lengthy finish. Pairs well with roasted vegetables, charcuterie, seafood. $27 .99

Kanonkop Kadette, Stellenbosch, South Africa

Varietal: Cabernet Sauvignon Alc. 14%

The Kanonkop Estate is often referred to as a South African “First Growth.” The fourth-generation family farm, presently run by brothers Johann and Paul Krige, has been owned and operated by the Sauer-Krige family since the early 1930s.The name Kanonkop is derived from a “kopje” (small hill) on the property, from which a cannon was fired in the 17th century to announce the arrival of the Dutch East India Company’s trading ships at Table Bay. Upon hearing this signal, local farmers would load their wagons and set off for the harbor to barter their produce. Situated on the lower slopes of the Simonsberg Mountain in Stellenbosch, Kanonkop encompasses just over 247 acres of vineyards at altitudes of 195–395 feet above sea level. Cooling breezes from False Bay provide natural “air conditioning” for the vineyards, which are planted predominantly on decomposed granite soils of Clovelly and Hutton. The Kanonkop Kadette shows opulent aromas of blueberries, plums, and red currants. Underlying hints of dried herbs and subtle oak spice add further complexity. The tannins are finely textured and add a sturdy framework to support the plush fruit core. Concentrated flavors of blue and blackberries, combined with delicate acidity, creates a classic Stellenbosch red  blend with a lengthy, dry finish. Pairs well with steak, lamb, grilled burgers. $17.99

Raats Dolomite Cabernet Franc, Stellenbosch, South Africa

Varietal: Cabernet Franc Alc. 14%

While Raats is best known for their sublime Chenins, winemaker Bruwer Raats also crafts scant quantities of an exquisite Cabernet Franc that shows the heights this under-the-radar grape can achieve in the hands of a master. For Bruwer, crafting wines under his own label means that he doesn’t have to worry about shareholders or catering to a market, or to keeping within a cellar’s style. He values the freedom to craft something he believes in. The Raats Dolomite has an enticing nose with its perfume of Cape fynbos, rosemary, lavender, and thyme with spicy notes of nutmeg, cloves, and star anise. The palate is dominated by brambly dark berry fruit, black cherries, and spice, with a lovely savory character and a streak of graphite. The palate is complex and layered, with silky, fine-grained tannins, distinct minerality and mouthwatering acidity. Pairs well with steak, barbecue, spicy sausage. $24 .99

Taaibosch Crescendo Red Blend, Stellenbosch, South Africa

Varietals: 65% Cabernet Franc, 26% Merlot, 9% Cabernet Sauvignon Alc. 13.5%

In the mid 1990s the property that would become Taaibosch began producing its own wines under the name Cordoba. These wines quickly gained fame, and by the late 1990s, Cordoba had become a cult brand and an icon of South Africa. At the time, it was the first Cabernet Franc-driven Bordeaux blend to be produced in South Africa. Unfortunately, in the early 2000s the cellar was made dormant and wine production under the Cordoba name stopped. In 2016, the Oddo family of France purchased the property, rejuvenated the vineyards, and built a new state-of-the-art cellar. (The Oddo family also owns Piton Sancerre and Vallon des Glauges domains in France). The Oddos named the property Taaibosch and quickly began the farm’s conversion to organic. Minimalistic intervention is applied throughout the winemaking process. The cellar system is gravitational to allow for gentle handling of the grapes and primary juice throughout the initial phase of vinification. This gives the wines a refined tannin structure characterized by balanced tension and longevity, not only in taste but also in terms of aging ability in bottle. Crescendo is a Bordeaux blend defined by Cabernet Franc. Crescendo is a reflection of the terroir from which its grapes originate and is characteristic of wine made in Stellenbosch. Notes of white pepper, clove, and red berries give this wine delightful aromatics. The tension in the wine lends itself to an elegant finish, bringing together the various elements in a gentle fashion resulting in an elegant, polished wine. Pairs well with roasted pork, beef stew, grilled lamb. $39 .99

WINES

Avinyo Petillant, Catalonia, Spain

Varietals: Muscat de Frontignan, Macabeo, Xarel-lo, Alc. 10.5%

Avinyo is a Cava producer in the Penedes region of Catalan, and they also produce this dry vi d’agulla, the Catalan term for a wine bottled with a little natural effervescence retained from the winemaking process. This vibrant and refreshing wine, lower in alcohol, is the traditional summertime drink of the Penedès region. Petillant is made with a blend of two organically farmed, estate vineyards. Finca La Guardia is the highest, most rugged vineyard on the property at 350 meters; here muscat de Frontignan was planted in 2003 in the stony calcareous-clay soils. Macabeo and xarel-lo are grown in the Finca Can Fontanals vineyard, planted from 1978 to 1988. This fresh, slightly fizzy white showcases heady aromas of honeysuckle and orange blossoms. Delightfully crisp and fresh on the palate, the finish is dry and mouthwatering. Great as an aperitif. Pairs well with salads, seafood, white meats. $19.99

Casa di Monte Biancospino, Tuscany, Italy

Varietals: 85% Trebbiano, 15% Malvasia, Alc. 12%

Though there have been grapevines on the land that makes up Casa di Monte since the 1920s, and the current owners purchased the vineyard in 1973, it was only in 2000 that Casa di Monte agricultural company was formed. Today, the company has 35 hectares for the production of red and white IGT wines and Chianti, Chianti Montespertoli, and Chianti Classico wines, and 7 hectares of specialized olive groves for the production of extra virgin olive oil, all of which are sustainably farmed. The Biancospinois is made from selected Trebbiano and Malvasia grapes. It has a straw-yellow color with greenish reflections, and an aroma of apple with a hint of fresh citrus and herbs. On the palate it is fruity, with good acid and a clean, dry finish. Pairs well with pasta, lean fish, cured meats. $14.99

Volker von Donabaum Grüner Veltliner, Burgenland, Austria

Varietal:Grüner Veltliner, Alc. 12%

Volker Donabaum, the founder of Volker Wines, has been in the wine industry practically since birth. He grew up on the Donabaum family estate in the Wachau in Austria, where the family has been making wine since 1833. Volker worked several harvests in Austria before working as an assistant winemaker in California, France, Italy, New Zealand, Australia, Oregon, and Canada. Grüner Veltliner is the most important autochthonous grape variety in Austria. It became widespread during the 1950s,and today this variety is most heavily planted in Niederösterreich and northern Burgenland. The von Donabaum Grüner is organically grown, and spends 5 months fermenting on lees with native yeast. It has mineral, chalk, lime-zest, and golden-apple notes, with zesty-acidity and elegance. It is clean and crisp, with a nose of freshly cut grass, green apple, and white peach. On the palate, it is lean and mineral-driven, with flavors of slate, lemon peel, and white flowers. Pairs well with salads, Asian food, and seafood. $17.99

Barrique Pinot Noir, Sonoma Coast, California

Varietal: Pinot Noir, Alc. 13%

Barrique’s Sonoma Coast Pinot Noir encompasses cool-climate vineyards in the Russian River Valley, Sonoma Coast, and Carneros AVAs. The blend also includes fruit from the Roses Estate Vineyard on Olivet Road, which is near icons like Martinelli. Once harvested, the fruit is gently transferred by gravity to open-top fermenters, where it was fermented with 33% whole clusters for added depth and structure. The resulting wine balances brightly focused and intriguing fruit, with velvety yet firm tannins and lovely acidity. Deep red in the glass, the nose is full of ripe huckleberry, cedar, and vanilla spice. The texture is plush with a broad mouthfeel. Flavors of blackberry compote, fig jam, and caramelized sugar round out a long finish.

Pairs well with pork, stews, mushroom dishes. $24.99

Chateau Ponzac Maintenant ou Jamais, Cahors, France, Varietal: Malbec, Alc. 13%

Château Ponzac was founded in 1998, when Matthieu Molinié took over his family estate after earning his degree in viticulture and oenology. After getting the same degree, his partner, Virginie, joined him two years later. The Molinié family has been living in the village of Carnac-Rouffiac since the 14th century and is inextricably linked to the local vineyards and winemaking traditions. Château Ponzac covers 28 hectares of vineyards in the Cahors appellation with vines that average 25-years-old. The wines reflect the terroirs that are typical of the area, featuring marl/limestone and clayey soils. Ponzac’s vineyards enjoy cool nights from their ideal location on the Cahors plateau, which helps confer an original style on their wines: medium bodied, yet fresh and long on the palate, with a vibrant expression of dark berry fruit. Their Maintenant ou Jamais pours a deep red color, has aromas of red fruit on the nose with hints of plum. On the palate, it is smooth with blackcurrant flavors, rounded tannins, and just a touch of acidity. Pairs well with steak, lamb, and dark-meat poultry. $ 18.99

FINE WINE TASTING @ SAVOUR WITH ARIK COLBATH OF CHARLES RIVER WINES

_________________________________________________________

Charles River Wine Company brought a forty-foot container full of largely pre-sold French wines to Massachusetts on September 10, 2004, and delivered its first orders four days later.

“Over the years we have developed a well-balanced portfolio of fine wines. It is global in reach with American wines well represented. We hold to our original intentions, continuing to grow a manageable company that competes successfully with the state’s larger competitors. We have focused on fine wines and used our group’s buying and selling skills to become an important resource to the best restaurant and store buyers of Massachusetts.” (Peter Sagansky – owner)

Arik Colbath has been with Charles River Wines for many years and has decades of experience in the industry. He has a passion for the boutique, small-production wines in the Charles River portfolio and will share with us some of his favorites.

Aniello Soil Blanco De Pinot Noir, Patagonia, Argentina

Varietal: (White) Pinot Noir, Alc. 13.5%

Argentina’s cool climate Patagonia region is a combination of jagged mountains, plateaus, snow, rivers, plains and sea. The eastern bank of the upper Río Negro region is carpeted by sandy, loamy soils. The constant breezes and low relative humidity help keep the Aniello vineyards pest-free. The resulting wines are considered more elegant and refined than many of the more common, warm-weather wines from the Mendoza area. Aniello produces this white wine, Blanco de Pinot Noir, by gently pressing the fruit with minimal skin contact. The wine is then fermented in concrete tanks with indigenous and inoculated yeasts. 10% of the wine is aged up to five months in French oak. Stone fruit and floral aromas on the nose are followed by a rich, yet crisp, mouthfeel. Pairs well with risotto, grilled tuna, souffles. $19.99.

Boutinot Tiger Horse Old Vine Cinsault, Western Cape, South Africa

Varietal: Cinsault, Alc. 14%

Cinsault has been overlooked for so long in the Cape, but it is a grape variety Boutinot has been championing for years. The vines are mostly 65-year-old bush vines from hidden corners of the Cape. No irrigation is used on the vineyards and very little crop control is needed due to the age of the vines naturally restricted yield. The climate is perfect for viticulture with the low rainfall in summer months, tempered by cool afternoon breezes and the cold winters allowing the vines to rest and to build up reserves. All grapes are picked by hand at optimal phenolic ripeness, followed by a fermentation using delestage, which brings a lower concentration of tannins and a higher concentration of esters, key compounds that contribute fruitiness. The result is a wine that is full of juiciness. Bright, expressive and gently savory on the nose, with a vibrant ruby color. On the palate there is fresh pomegranate flavor and acidity, savory gamey notes, and a bright, cherry fruit. Pairs well with Asian duck dishes, carpaccio of tuna, beef or game. $14.99

Foxglove 2017 Pinot Noir, Central Coast, California

Varietal: Pinot Noir, Alc. 13.7%

Bob and Jim Varner are best known for the Chardonnay and Pinot Noir they produce under the Varner label, but with Foxglove they have produced one of the great value labels made in California. The Foxglove wines are selected from several sites located in the Central Coast. The warm climate and ocean add a burst of fruit with freshness. The use of oak is minimal yet adds some spice. Ripe red cherry and raspberry fruit leads the way, backed by juicy acidity, hints of autumn leaves and sweet smoky spice. The 2017 Foxglove Pinot Noir Central Coast is made from pinot noir clones pommard and 777 sourced from a hillside vineyard in Santa Barbara County, 14 miles from the Pacific Ocean at 600 feet elevation that has sandy, loamy soil. Medium-bodied, it has aromas of brambly black cherries that dominate on the palate. These cherry characters are flanked by subtle notes of cola, baking spice, tobacco, and herbs. Tannins are soft and the finish is long. Pairs well with pork, roast turkey, mushroom dishes. $22.99

Chateau Sainte Eulalie Plaisir d’Eulalie, Languedoc, France

Varietal: Grenache, Syrah, Carignan, Alc. 14.5%

Chateau Sainte Eulalie is located in the Minervois region of France’s Languedoc, midway between Narbonne and the Medieval town of Carcassonne. The snowy peaks of the Pyrenees can be seen on the horizon and Narbonne and the Mediterranean lie 45 minutes to the south. The estate is comprised of 34 hectares on terraces 200 meters above the town of La Liviniere. Long regarded as the finest section of Minervois, La Liviniere has now been recognized as an official “Cru de Languedoc” and is entitled to its own appellation. The stony soil of clay and limestone is planted with Syrah, Grenache, Carignan, and Cinsault, with an average age of 25 years. The domaine also includes some century-old Carignan vines and 70 year-old Grenache. Viticulture is organic and is Certified Sustainable. Brilliant deep purple-ruby in color, the Plaisir has a nose of bright red and black fruits, and a hint of licorice. The palate is dense with silky smooth tannins. Full, round, and smooth, it is a very easy drinking wine. Elegant finish with lasting fruit and slightly spicy note. Pairs well with cassoulet, lamb, roast venison. $18.99

Peñalolén Cabernet Sauvignon 2018, Maipo Valley, Chile

Varietal: Cabernet Sauvignon, Alc. 14.5%

The Maipo Valley is Chile’s most famous wine region. Set in the country’s Central Valley, it is warm and quite dry. Alluvial soils predominate but are supplemented with loam and clay. The climate in Maipo is best suited for ripe, full-bodied reds like Cabernet Sauvignon (the region’s most widely planted grape). The 2018 Peñalolén Cabernet Sauvignon comes from a very strong vintage and is a great value at this price. Full-bodied, and offering mouth-coating assorted dark fruit, its plush mouthfeel and supple tannins makes this a sensory experience, with some spicy earth tones adding complexity and intrigue. Pairs well with grilled steak, burgers, portabella mushrooms, and hard cheeses like gouda or cheddar. $ 24.99

And don’t forget to check out what’s new in our beer case, including two juicy NE IPAs and a clean, refreshing rice lager from East Regiment Brewing, a veteran-ownedbrewery in Salem and a crisp new lager and a smooth, refreshing kolsch from Rockport Brewing.

WINES

Maison Olivier Tricon 2020 Chablis, Chablis, France

Varietal: Chardonnay, Alc.12.5%

Raised in a farming and wine growing area, Olivier Tricon has worked in various French regions, then as a cellar master on the family estate. In tandem, he worked as a broker, which led to him setting up his own wine merchant’s business. In 1998, Olivier purchased this estate — and thanks to excellent vineyards and knowledge, these wines will offer some of the best values in Chablis. This Chablis is made from 100% Chardonnay, from 20-year-old vines, sustainably grown on Kimmerigean limestone and vinified entirely in stainless steel. The result is a pleasantly austere amalgamation of green apple, under-ripe pear and a firm mineral backbone punctuated by crushed seashell and steel. Brilliant pale yellow with green tints. Lovely nose combining citrus fruits, acacia, and mineral notes. Ample attack flowing into a well-structured, ripe, rounded and concentrated palate where well-integrated freshness adds depth. Pairs well with seafood platters, tempura, and goat cheese. $34.99

Le Meurger 2022 Chardonnay, Macon, France

Varietal: Chardonnay, Alc. 13%

The Le Meurger name stems from the word “meurs” (walls), constructed to mark out a property, or built along the edges of plots from stones extracted from the fields. The walls were called “murgers” or “les meurgers.” The wines are great examples of the terroir behind the walls in this Burgundian vineyard. The Chardonnay grapes for Le Meurger wines are grown on the hillsides of Macon, around the Vire-Clesse area. The soils here have a higher amount of limestone than most of the region, giving the grapes a more elegant style, and lending the wine a slightly more mineral edge on the finish. Light citrus aromas of lemon and pear are enveloped with acacia honey. Citrus follows onto the palate, where lemon and lime give way to a floral honeyed finish. Pairs well with shellfish, crab cakes, chicken. $22.99

La Pietra del Focolare Augusto Colli di Luni,

Varietal: Vermentino, Alc.13%

La Pietra del Focolare is located right in the heart of that territory that gave birth to the small and prestigious DOC dei Colli di Luni. The company, founded in 1995, is located on the plateau between the hills of Castelnuovo Magra and Lunion, the winding southeastern side of the Liguria region. This small business project was born from the great passion for nature and viticulture of Stefano Salvetti and Laura Angelini. Augusto is a Vermentino that epitomizes the Colli di Luni tradition. It comes from the lowest vineyards of the D.O.C. with clayey and fresh soils, which surround the historic Villa of Colonel Archime de Casani, within an enclave, sheltered from the cold north winds and pleasantly tempered by the sea breeze. The wine is characterized by a straw yellow color with faint greenish reflections. On the nose there are  notes of wild white flowers and of aromatic herbs, together with hints of pear and apple. On the palate it is fine and easy to drink but compelling, with good body. Pairs well with seafood, pasta with pesto, and ratatouille. $29.99

Vrac Cotes du Rhone, Rhone, France

Varietals: 40% Grenache, 40% Syrah, 20% MourvedreAlc.14.5%

Vrac, or “envrac” translates to “bring your own bottle.” In many French villages, locals will bring bottles or jugs to a nearby winery and fill them up with an easy-drinking wine to use as their house wine. Vrac Cotes du Rhone is made from fruit grown in the southern Rhone valley; 90% of the fruit is de-stemmed, with the remaining 10% left as whole clusters. Fermentation occurs in open concrete and stainless-steel vats. After pressing, the wine is aged in steel tanks. In the old-school approach, a Cotes du Rhone red wine would almost always have seen some barrel ageing — the same barrels sometimes used for too many vintages — leaving the opportunity for brettanomyces or other bacterial life to flourish and become part of the aromatic profile, often described as  barnyard. But in the new school of winemaking, every attempt is made to capture the freshness of fruit while leaving room for the stony minerality to show through, so no oak is used at all. The result is a delicious, fresh wine that delivers a true sense of place. Pairs well with lamb, venison, pork. $16.99

Comunica Suc de Saulo, Montsant, Spain

Varietals: 65% Samsó (Carignan) 35% Garnatxa Peluda (Downy Grenache), Alc. 13.5 %

Celler Comunicais located in the town of Falset, 370 meters above sea level in a dry, Mediterranean climate. Vineyard age ranges from 25 – 85 years. Patri Morillo and Pep Aguilar were not born into the world of wine. They did find it though, and 10 years after working in other people’s vineyards, Pep and Patri now have their own estate project. For years, the wine style in Montsant has been chasing that of Priorat, but Pep and Patri have their own style. Leaving the wine unoaked, they offer the 3 most important details in a wine: soil, fruit, and vintage. Their Montsant is more akin to the Cru Beaujolais and Northern Rhone. The wine is a snap-shot of the estate. It depicts the estate’s soils of decomposed granite and climatic conditions which are slightly less severe than those of the rest of the area. Suc de Sauló translates from Catalan to mean “juice of granite.”Fresh blackberry, blackcurrant and raspberry flavors offset by an intense mineral line and incredibly smooth fruit tannins. There’s a touch of thyme and bay to the palate, but this is anything but rustic. Comunica Garnacha Carinyena is the estate wine of Mas d’en Cosme, made from roughly equal portions of Garnacha and Carinyena, and a touch of Syrah (10%). It’s fermented with indigenous yeast and lots of whole bunches, and raised entirely without oak to preserve the bright fruit and incredible texture inherent in the wine. Comunica shows fresh blackberry, blackcurrant and raspberry flavors offset by an intense mineral line and incredibly smooth fruit tannins and a hint of thyme and bay to the palate. Pairs well with beef brisket, roasted pork, smoked turkey. $24.99
