 WINES

Muses Estate Crispy Assyrtiko, Viotia, Greece

Varietal: Assyrtiko Alc.13%

Northwest of Athens, in the region of Viotia, lies the Valley of the Muses, formed on the slopes of Mount Helicon by the short course of the river Permissos on its way to the sea. In ancient times, the idyllic scenery of the valley was the home of the 9 Muses, daughters of Zeus; it was also the home of Hesiod, one of the greatest poets of ancient Greece, who was born and wrote his works in ancient Askra (modern Askri), a city “rich in grapes.” This is the place where the vineyards of the Muses Estate lie. In 1946, his deep love for wine and the millennia-old winemaking tradition of his homeland led Nikolaos Zaharias to found a small winemaking facility. In 2005, Nikolaos’s grandsons– Nikos, Stelios and Panayiotis– took their place in the family business and created Muses Estate. The Crispy Assyrtiko is a fresh, vibrant wine with firm and crisp acidity seamlessly blending notes of citrus, green apple, and a hint of thyme, with a long mineral finish.

Pairs well with fish, seafood, salad. $ 19.99

Chateau de Sancerre, Sancerre, Loire, France

Varietal: Sauvignon Blanc Alc.12.5%

The Château de Sancerre is one of the few French castles to bear the name of an appellation. Located on the left bank of the Loire, overlooking a unique terroir of four different soils, it has 55 hectares of vineyard, planted with vines of average age of 25 years. The rolling hills and semi-continental climate of the region produce Sauvignon Blanc with a beautiful, lively and fresh structure. The wines of Château de Sancerre are vinified and aged until bottling directly at the Château. The vineyard is located in several communes of the Appellation area: Sancerre, Bué, Crézancy, Thauvenay and Ménétreol. The three characteristic terroirs of the Sancerre appellation are therefore represented: Terres Blanches, Silex and Caillottes. The 2018 vintage is marked by a good balance and a lot of accuracy. With a combination of fruitiness (ripe gooseberries and tropical fruit) on the nose and a good balance between fruitiness and minerality on the palate, this wine has all the vibrant characteristics of a Sancerre.

Pairs well with seafood, grilled chicken, goat cheese. $ 39.99

Cherry Hill Estate Pinot Noir, Eola Hills, Oregon

Varietal: Pinot Noir Alc. 14%

The land that makes up Cherry Hill Estate has always been known as Cherry Hill in local lore. Wild cherries have always grown here, and much of Cherry Hills’ land was planted in sweet Royal Anne cherries in the 1960s.Even earlier, the hill was planted with prune trees, which produced succulent fruit. The entire Willamette Valley is known for wonderful soil and a long, moderate growing season that is just right for agriculture of all kinds. Cherry Hill Winery lies directly atop the 45th parallel, at the same Pinot-friendly latitude as Burgundy. It is a 150-acre estate, with 90 of those acres planted to Pommard and Dijon clones of Pinot Noir. This Pinot Noir has supple, vivid raspberry fruit on full display. It is juicy and bright and well balanced throughout.

Pairs well with fish, beef, wild game, pastas.$32.99

Vinicola del PrioratOnix Classic, Priorat, Spain

Varietals: 50% Carinena, 50% Garnacha Alc.14%

The region of Priorat has risen to prominence in the last 25 years, going from being relatively unknown to now producing some of the most highly valued wines in the world. There is a long history of wine production in the Priorat; Carthusian monks from Provence first planted vines in the 12th century. The region of Priorat is named after the priory they built in the hills there. A harsh, continental climate with long, hot summers and very little rain means that vines are virtually the only crops able to survive in the ruggedly mountainous Priorat. The vines are planted on steep hillsides, making mechanized farming virtually impossible – the work in the vineyards is mostly done by hand. The region is known for its unique soil, known as llicorella. Remarkably infertile, it is a dark brown mix of broken slate and quartz that sparkles in the sun. Combined, these factors lead to low yields of incredibly concentrated grapes. The head winemaker at Vinicola del Priorat, Sandra Estevez, is part of a growing movement of female winemakers in Spain. She has made a name for herself by producing elegant, carefully balanced wines that frequently garner high praise. Onix pours a dark ruby color. On the nose, it has aromas of plum with hints of earth and meat. It is soft and lush on the palate with round, firm tannins, and a good finish.

Pairs well with roasted vegetables, sausages, game. $ 24.99

Blue Rock Vineyards Baby Blue, Alexander Valley, California

Varietals:44% Cabernet Sauvignon, 32% Merlot, 10% Syrah, 9% Petit Verdot, 4% Malbec, 1% Cabernet Franc Alc.14.5%

Dating back to 1880, the 100-acre Blue Rock estate tells the story of how European winemaking came to Sonoma County’s Alexander Valley. Italian immigrants brought with them olive trees, vine cuttings, and knowledge of grape growing. The region’s undulating golden hills and idyllic vistas are even reminiscent of Tuscany itself. Blue Rock Winery was first settled by Italians who worked at the Italian-Swiss Colony winery just down the road. Acquired by Kenny and Cheryl Kahn in 1987, the estate maintains much of its old-world character, and its original olive trees that are now over 140 years old. Over the years, Blue Rock has been moving toward a low-input cultivation policy that is reliant upon compost and natural amendments rather than chemical fertilizers. Baby Blue is a blend of the five Bordeaux varietals plus Syrah. Blackberry, blueberry, black currant, and anise are present on the nose and the palate, and the wine has a full, velvety mouthfeel.

Pairs well with grilled salmon, pork tenderloin, meaty pasta. $36.99

Fireside Chat Series – Elizabeth Kensinger

Join us in welcoming Elizabeth Kensinger, Professor of Psychology and Neuroscience at Boston College, who will discuss memory. Kensinger is known for her research on emotion and memory over the human lifespan. She is the author of the book, “Emotional Memory across the Adult Lifespan” and the new “Why We Forget and How to Remember Better,” in which she and Dr. Andrew Budson offer insights on how to keep both a healthy brain and a strong memory.

If memory is a simple thing, why does it so often go awry? Why is forgetting so common? How can you be certain about something you remember – and be wrong about it? Why is it so difficult to remember people’s names? In “Why We Forget,” Dr. Andrew Budson and Dr. Elizabeth Kensinger address these questions and more, using their years of experience to guide readers into better memory.

This Author Talk is free admission, food and drinks are available for purchase. Light refreshments will be provided. Event will take place at the Beauport Hotel. RSVP via email Concierge@BeauportHotel.com.

Varietal: Chardonnay Alc.14.5%

Precision Wine Co. presents a distinguished and diverse collection of wines. Each wine is made with meticulous attention to detail and a commitment to quality; from harvesting the grapes in the vineyards to designing original packaging, every step of the winemaking process is handled with precision. The wines are made to showcase the complexity of flavor, diversity of terroir, and distinct characteristics of California’s appellations and wine regions. Proprietor and vintner Trevor Sheehan started his journey to create a top wine collection when he became a winemaker 10 years ago. His first wines were eight barrels of Chardonnay from the Beckstoffer Vineyard and Cabernet Sauvignon from Howell Mountain. Octopoda Chardonnay offers notes of white flowers, grapefruit, baked apples, buttered popcorn and a beautiful, toasted oak finish.

Fontezoppa Asola 2017, Marche, Italy

Varietal: Maceratino Alc. 14%

Cantine Fontezoppa is a young company in central Italy on the Adriatic coast in the province of Macerata between Civitanova, Marche and very close to Civitanova Alta, an ancient 14th century village. The company, which takes its name from the ancient source of water that gushed out where the rows of vineyards now grow, was born thanks to the acquisition of the land in Civitanova Alta by the Luzi family in the late 1990s. Made from hand-picked Maceratino (or Ribona) grapes, this wine has an intense straw yellow color and a strong and complex nose, with aromas of ripe fruit, citrus peel, peach, yellow flowers, united by a deep mineral note and a touch of vanilla. It is balanced and consistent on the palate, with a pleasantly long and fresh finish.

Pairs well with anchovies and other fish, white meat, truffles. $31.99

Firriato Le Sabbie Dell’Etna Rosso, Sicily, Italy, Varietal: Nerello Cappuccio, Nerello Mascalese Alc. 13.8%

Made from grapes grown on the north side of Mount Etna, the only active volcano in Europe, this rosso is perfect for the friend who insists on drinking red wine even though your menu really calls for white. The wine’s minerality, ripeness, and elegance, with hints of black currants, licorice, pepper, and wilted violet, it’s sure to please your contrary friend.

Pairs well with seafood and lobster. Serve it to the red wine lovers when everyone else is drinking white with their lobster! $25.99

Spineto Morellino di Scansano 2019, Tuscany, Italy Varietal: Sangiovese, Cabernet Sauvignon, Merlot Alc. 13.5%

Erik Banti has been producing wines in the Maremma Toscana region in the south-west of Tuscany for decades. In 1981 he produced his first vintage of Morellino. At the time, Morellino was a new and relatively unknown DOC. Today, the area is well known for producing full-flavored wine. The Spineto Morellino pours clear, bright, ruby red. The nose is lightly fruity, with hints of black cherries and violets. On the palate it is dry, tangy, and lightly tannic with good balance, body and lingering aromas, and a long finish.

Pairs well with fish baked or grilled, light pasta dishes, white and red meats and soft cheeses, such as Robiola, and fresh pecorino. $19.99

Chateau Gigognan 2016 Clos du Roi Chateauneuf du Pape, Rhone, France, Varietals: 70% Grenache, 25% Syrah, 5% Mourvèdre Alc. 15%

In the heart of the Rhône Valley, close to the famous papal city of Avignon, Château Gigognan encompasses 110 hectares of vines in a landscape of rolling hills, parasol pines, and olive trees. Born of a winegrowing tradition dating back to Roman times, Château Gigognan is a long-established wine estate and part of the historical heritage of Provence. It produces red, white and rosé wines in the appellations of Châteauneuf-du-Pape, Signargues, Côtes-du-Rhône Villages, and Côtes-du-Rhône. Vivid ruby, this Chateauneuf-du-Pape has aromas of highly perfumed red fruit complicated by suggestions of garrigue, licorice, and white pepper. Spicy and focused on the palate, it displays vibrant raspberry, bitter cherry and floral pastille flavors, along with a building smoky nuance. It finishes with resonating spiciness, a suggestion of Chambord, and youthfully chewy tannins.

Pairs well with barbecued beef ribs, duck, mushroom dishes, lamb chops. $49.99

And don’t forget to check out what’s new in our beer case. We just got in a new shipment of Maine Beer, with the IPA’s “Lunch” and “Little Whale Boat” leading the charge.  We have a rich brown ale called “Brown Dog” and the wonderfully dark but slightly hoppy Robust Porter, both from Smuttynose.

A Very Special Saturday Wine tasting at Savour with Owner, Kathleen Morgan, March 11 from 2 – 4 pm

THIS SATURDAY, March 11, 2 -4 pm

COMPLIMENTARY

FINE WINE TASTING @ SAVOUR WITH Owner, Kathleen Morgan

An almost-extinct varietal (Elbling) revived, a brilliant sparkling Cabernet Franc (most popular at Oak and Ember), a Wine Spectator “100 best” favorite Pinot Noir, made from pressed juice from several different vintages as a result of California’s devastating wildfires, a unique Calabrian varietal, Gagliano, celebrating its 160th year and a powerful gem of a 2015 Médoc – just at its drinking peak now – this is indeed a tasting worth Savouring!

WINES

Crémant de Loire Brut Rosé “La Petite Marquise,” Loire, France, Varietal: Cabernet Franc, Alc.12.5%

The winegrowers make this crémant adhering strictly to the rules of the Traditional Method. Hand picking, gentle pressing, and cool fermentation (18°C) of the grapes ensure that all the aromas are preserved. a selection of the best wines undergoes a second fermentation in the bottle. La Petite Marquise is a lovely pink colour with brilliant highlights. It has a fine, persistent bead. Its fine, lively bouquet is full of fresh, red-berry fruit aromas (wild strawberries and cherries). It is well-balanced on the palate with good aromatic intensity.  It follows through with a fresh, wonderfully subtle aftertaste.

Serve as an aperitif. Pairs well with quiches, savoury cakes, red-berry fruit sorbet, chocolate tart, dried-fruit desserts. $17.99

Hild Trocken (dry) Elbling, 2021, Upper Mosel, Germany, Varietal: Elbling, 11.5% alcohol

(From the Importer Vom Boden): ‘Zehnkommanull’ (which means 10%) is, for us at least, a sacred bottle of wine. It is sourced from old, terraced Elbling vineyards which would otherwise have gone fallow, if it weren’t for the heart and passion and sheer force-of-will of Matthias. He’s been making this wine since 1986, from about .15-hectare of vineyard. That’s right: point-one-five hectares, about 1500 square meters.

“Zehnkommanull” (which translates to “10 point 0”) is called thus because, even bone dry, it rarely ferments to more than 10% ABV. That is the magic of old vines – phenolic ripeness without excess sugar. This is an ultra-light white, a quivering, angelic, porcelain wine with glossy, razor-sharp edges and a laser-beam lemon-skin citrus. The structure, the saturating acidity, the tapering finesse and needlepoint fine-ness of the wine showcase its relation to that “other” grape of the Mosel, Riesling.

Pairs perfectly with grilled oysters, shellfish, and delicate white fish, such as Grey Sole or Haddock.

Roco Gravel Road Pinot Noir, Willamette Valley, Oregon

Varietal: Pinot Noir Alc. 14%

When Rollin Soles and Corby Stonebraker-Soles came to Oregon in the 1980s, they arrived at the leading edge of a movement. The idea of Oregon wine was actively in the making, emerging in real time through the daring efforts of people like Rollin and Corby and a diverse group of entrepreneurs who wanted to produce world-class wines in an unproven but promising winegrowing region. They built wineries, developed foundational industry organizations, and worked to establish Oregon as the premier place to make Pinot Noir and Chardonnay outside of Europe. Now, more than 35 years later, ROCO showcases Oregon winemaking at its peak—through a talent that has produced hundreds of 90+ scores from leading industry critics, repeated placement in Wine Spectator’s Top 100 Wines of the World, and multiple bottlings served in the White House. The hills in the Willamette Valley are punctuated by gravel roads, which lead to the region’s finest vineyards. ROCO’s Gravel Road Pinot Noir is a blend of several of the distinctive vineyards including the Soles’ own Wits’ End Vineyard in the Chehalem Mountains AVA. The aromas of dark fruits like cherry, black plum and pomegranate, with a background of spices is followed by flavors of Luxor cherries, red cranberry compote, strawberry leather, black currant, mission fig, and prickly pear, spiced Sichuan peppercorn, petrichor, and Christmas spice on the palate. This wine has a most generous middle “sweetness” and a long, rich, sanded tannin finish.

Pairs well with grilled Salmon or Arctic Char, mushroom tart, and Pork tenderloin with mustard or boysenberry sauce. $27.99

Ippolito “160 Anni” Rosso, Calabria, Italy

Varietal: Gaglioppo Alc. 15%

In 1845, Vincenzo Ippolito stamped his initials on a country house that sat amongst vineyards, olive groves, and orange trees in the heart of the Marina of Ciro. With a 160+ year old history, Ippolito is Calabria’s oldest winery. Located in the historic center of Ciro Marina, the heart of Calabrian winegrowing, the company maintains a farm of over 100 hectares that are distributed amongst rolling hills and sunny plains near the Ionian Sea. At the forefront of the company’s mission is the restoration and enhancement of indigenous grapes such Gaglioppo, Calabrese and Pecorello. Through constant research, the use of innovative techniques, and direct control throughout the entire production process, Ippolito wines convey elegance and a strong identity with their territory. The company believes in preserving their environment by using sustainable farming and winemaking methods. For this tribute to the 160th anniversary of the Ippolito vineyard, only the best grapes are used. The 160 Anni pours ruby red with a complex nose of ripe blackberries, cherries, violets, juniper, cloves, cocoa and black pepper. Structured and round on the palate, it has intense flavors of dark fruit and a persistent finish.

Pairs well with Pasta Bolognese, Margherita Pizza, and roasted Mediterranean vegetables with Halloumi cheese.

$19.99

Tour Prignac Grande Reserve Medoc, 2015, Bordeaux, France, Varietal: Cabernet Sauvignon, Merlot – Decanter, 92 pts., 13.5% alcohol

One of the most—if not the most—famous red wine regions of the world, the Medoc reaches from the city of Bordeaux northwest along the left bank of the Gironde River almost all the way to the Atlantic. Its vineyards climb along a band of flatlands, sandwiched between the coastal river marshes and the pine forests in the west. The entire region can only claim to be three to eight miles wide (at its widest), but it is about 50 miles long.

Chateau Tour Prignac stands in the village of Prignac-en-Médoc, taking its name from the towers which adorn the structure. 973 saw a re-awakening of the vineyards, when the property came into the hands of the Castel Family; they immediately embarked upon a large-scale program of renovation and modernization. Today, Chateau Tour Prignac stands within one of the largest estates in Médoc and is proud to possess a vineyard specifically re-designed with quality in mind.

60% Cabernet Sauvignon and 40% Merlot, the deep garnet color of this wine speaks volumes about its quality.  A Powerful dense nose with aromas of black fruit, liquor cherries and fresh, high-quality oak. (Aged 12 months in neutral French oak). This is carried through to the palate with an additional touch of smoothness. The fine elegant tannic structure supports superbly intense flavors of Havana cigars and chocolate. The finish has remarkable length. One of the great Bordeaux vintages, which produced very age-worthy wines, this gem from 2015 is just ready to drink now. Pairs remarkably with roast leg of lamb or any full-flavored rich meat such as Prime Rib, Venison, or Wild Boar. A great gift wine, we are thrilled to offer it at the budget-friendly price of $34.99.

And don’t forget to check out what’s new in our beer case, including Rockport Brewing’s black lager, Steel Derrick, and their red lager, Perilous Voyage.

Wines

Eifel-Pfeiffer Graacher Himmelreich Riesling Feinherb 2016, Mosel, Germany

Varietal: Riesling Alc.10.5%

Eifel-Pfeiffer has been dedicated to the cultivation of wine, especially Riesling, since 1642. The winery’s vines grow in an ideal microclimate in the steep slate slopes that slope down to the Moselle. The fine slate, mineral weathering soils offer wonderful conditions for the Riesling. Heinz Eifel’s decades of experience and the inspiration of oenologist Anne Eifel-Spohr combine to form a future-oriented family winemaking team. Rieslings with an individual character are the result of this philosophy. This almost golden colored Riesling from the Mosel opens with a gentle pineapple bouquet. On the palate, it is medium bodied, nicely balanced, round, and juicy. Flavors of Asian pear and lemon blend with hints of minerality and a dash of white pepper. The finish is off-dry and nicely refreshing.

Pairs well with Asian food, chicken, and cured meats. $21.99

Casale del Giglio Bellone, Lazio, Italy

Varietal: Bellone Alc.13.5%

Unlike other regions of Italy, the area between the towns of Aprilia and Latina in the Agro Pontino valley south of Rome, where Casale del Giglio lies, was still uncharted in viticultural terms when Berardino Santarelli and his son Antonio launched a research project in 1985 aimed at identifying and maximizing the territory’s potential for quality viticulture. They planted close to 60 different experimental vines in Casale del Giglio’s soil. Since the early 1990s, Antonio and enologist Paolo Tiefenthaler have achieved remarkable results from an intense program of research and experimentation. The Bellone grape is a variety cited by Pliny the Elder. Today the grape is cultivated from the Roman to the Lepini hills and flourishes at Casale del Giglio. Deep yellow flecked with gold, the wine evokes ripe tropical fruit such as mango and papaya, carefully balanced by a marked acidity which makes it suitable for long bottle aging. Rich, ample and lingering on the palate with light floral and spicy notes.

Pairs well with grilled fish, Italian fish stew. $17.99

Cantina Tollo Montepulciano d’Abruzzo,

Varietal: Montepulciano Alc. 13.5%

Cantina Tollo was founded in 1960, when the Abruzzo countryside had depopulated, and many Italians had left the country in search of a better future. Cantina Tollo’s founders, whose families had been winemakers for generations, decided to stay in the vineyards, creating Cantina Tollo. Cantina Tollo played an active part in helping to bring about a radical change in the local wine-growing landscape. Cantina Tollo has also had an important part to play in the process of regulation, initiatives for the protection of regional wines and quality improvement programs for grapes and winemaking techniques. The Tollo Montepulciano pours an intense ruby red with purple hues. On the nose, there are fragrances of ripe red fruit, with hints of vanilla, tobacco, cocoa and spicy notes. It is full-bodied, velvety, enveloping, and persistent in the mouth.

Pairs well with hamburgers, pizza, smoked meats. $21.99

Anna Maria Abbona “Sori dij But” Dolcetto 2020, Dogliani, Italy

Varietal: Dolcetto Alc.13.5%

The quality of Dolcetto from the village of Dogliani has been skyrocketing in the last few years, and Anna Maria Abbona’s work is a good example of this. Her oldest vines were planted by her grandfather in the ‘30s, and the vineyards are steep and perfectly exposed. More recently she has become a convert to the doctrine of low yields, and she has joined the elite of Dogliani. Producers in Dogliani take Dolcetto as seriously as producers in Barolo take Nebbiolo. Dolcetto is planted in all the best sites and vinified with great care, which is not always the case with Dolcetto d’Alba. Dolcetto di Dogliani ‘Sori dij But’ ‘Sori’ is Piedmontese dialect for the sunny south face of a hill. ‘But’ or Butti is the name of the hamlet where Anna Maria and her husband, Franco, have their house and cellar. This is classic Dogliani Dolcetto, fermented and aged in stainless steel. It shows great color, reddish purple and violet-tinged, aromas of blueberries and tealeaf, and some tea tannins to go with the abundant fruit on the palate.

Pairs well with bruschetta, pasta Bolognese, cioppino. $19.99

Punch Vineyards Cabernet Sauvignon 2019, Napa Valley, California,

Varietal: Cabernet Sauvignon Alc. 14.5%

Punch Vineyards Cabernet Sauvignon is made by a small group of Napa Valley artisans whose careers were built producing top-rated wines for prestigious vintners. They came together to produce the best Cabernet Sauvignon they could for a reasonable price. Punch Vineyards’ wine has all the hallmarks of a luxury Cabernet Sauvignon: concentration, bold, structured, complex flavors of black cherry, blackberry, mocha, spice, toasty oak, softly assertive tannins, good structure, and a long finish.

Pairs well with lamb skewers, grilled steak, pepper-crusted tuna. $39.99

And don’t forget to check out what’s new in our beer case, including Rockport Brewing’s black lager, Steel Derrick, and their red lager, Perilous Voyage.
