Cincinnato Castore, Lazio, Italy, Varietal: Bellone Alc. 13%

The Cincinnato winery, founded in 1947 and named after the ancient Roman senator and farmer Cincinnatus, is a small co-operative (126 growers, with a total of 250 hectares of vines), located an hour south-east of Rome near the town of Cori, uses native grape varieties to produce flavorful, distinctive, well-made wines. The wine is named Castore after the mythical twins Castor and Pollux, the archeological remains of whose temple enriched Cori’s heritage. Straw yellow in color, Castore has a delicate fruity nose, luscious texture and juicy acidity and flavors of honey, citrus, and tropical fruit.

Pairs well with pasta and seafood. $ 14.99

Winzer Krems Grüner Veltliner 2021, Kremstal, Austria, Varietal: Grüner Veltliner, 12 Alc. %

Wine growing in and around Krems can be traced back more than 2,000 years. Due to the mild climate, the quality of the soil, and the local wine growers’ hard work, Krems and the Wachau developed into Austria’s best wine-growing regions. Winzer Krems is one of the most significant producers and the most successful exporter of estate bottled quality wine in Austria. The estate is owned by 900 winegrowers who grow their grapes on 2.570 acres in Krems and the surrounding wine- growing regions. The Winzer Krems Grüner Veltliner pours greenish yellow. On the nose it has an herbal and slightly peppery citrus scent with hints of gooseberries and lychee; on the palate it is strong, spicy, vibrant, and beautifully balanced with a fine acid structure.

Pairs well with sushi, shellfish, grilled chicken. $14.99

Mas de Libian “Bout d’Zan” Côtes-du-Rhône, Southern Rhone, France, Varietal: 80% Grenache, 20% Syrah Alc. 13.5%

Mas de Libian is situated in the village of Saint-Marcel d’Ardeche in the southern Rhone Valley. The farm has been in the Thibon family since 1670; today the winemaking is presided over by Helene Thibon, who took over in 1995. The estate consists of 25 hectares of vineyards and 8 hectares of “nourishing” land planted in olive trees, vegetable and flower gardens, and grains to support the organic and biodynamic viticulture. Mas de Libian began its biodynamic farming in 2005 and was certified by Demeter shortly afterward. Bout d’Zan is grown on clay-limestone soils; all grapes are hand-harvested, fermentation is powered by native yeasts, and the wine ages for 9 months in large oak barrels. Dark ruby-red in the glass, the wine has aromas of black cherries, chocolate, and spice. Mouth coating and chewy in texture, it has flavors of plums and blackberries with a hint of vanilla. It is tannic and spicy with a long finish.

Pairs well with lamb, Mediterranean dishes. $19 .99

Barrique Pinot Noir, Sonoma Coast, California, Varietal: Pinot Noir Alc. 13%

Barrique’s Sonoma Coast Pinot Noir encompasses cool-climate vineyards in the Russian River Valley, Sonoma Coast, and Carneros AVAs. The blend also includes fruit from the Roses Estate Vineyard on Olivet Road, which is near icons like Martinelli. Once harvested, the fruit is gently transferred by gravity to open-top fermenters, where it was fermented with 33% whole clusters for added depth and structure. The resulting wine balances brightly focused and intriguing fruit, with velvety yet firm tannins and lovely acidity. Deep red in the glass, the nose is full of ripe huckleberry, cedar, and vanilla spice. The texture is plush with a broad mouthfeel. Flavors of blackberry compote, fig jam, and caramelized sugar round out a long finish.

Pairs well with pork, stews, and mushroom dishes. $24.99

Muri Drinks, Copenhagen, Denmark

Muri Drinks is obsessed with flavor and relentless in its pursuit of a quality beverage that is complex and deeply satisfying, with or without alcohol, and with changing perceptions around the no- and low-alcohol space. Founded in 2020 by Murray Paterson, a UK expat living in Copenhagen, Muri is pushing the realm of possibility in non-alcoholic drinks through fermentation, foraging, and blending. Muri is informed and inspired by the gastronomic community in Copenhagen, particularly the city’s expertise in fermentation techniques. Muri crafts naturally non-alcoholic beverages without the aid of dealcoholization —a process that can strip flavor as well as alcohol— or the addition of flavor or coloring agents. Although the beverage is inspired by wine, Murray didn’t want to create a drink that was merely imitating something else. Muri is exclusively made with natural ingredients of verified provenance and utilizes ancient techniques to craft their natural, non-alcoholic drinks. Each batch is hand-made in their Copenhagen workshop in limited runs.

Muri Drinks Nuala

Muri’s red wine alternative is called Nuala, which means “beautiful” in Gaelic. It is a still, red beverage that blends a series of short fermentations to achieve its bright, gulpable profile. It is a cuvée of fermented blackcurrant piquette, red currant, French oak-aged kombucha, sloe berries, keemun tea, chamomile kefir, and fig leaf and pine kvass. The base of this blend is a blackcurrant piquette (fermented with pichia kluyveri yeast) which provides a structure of juicy fruit and tannins. This base is mixed with red currant juice, water kefir macerated with chamomile flowers, black tea, supernatant kombucha (which uses the liquid byproduct of brewing yeast production), kvass infused with fig leaves for texture, and pine needles. The drink is then macerated in French oak barrels to add depth and complexity. Nuala shows tart red berries, light tannins, and balanced acidity. Juicy and fresh, it has gentle forest-floor aromatics with tart red fruit, pine, fig, oak, and mushrooms on the nose, bright red acidity, and a gently tannic grip.

Serve slightly chilled. Pairs well with charcuterie, cheese, and ceviche. $32.99

Muri Drinks Passing Clouds

Passing Clouds is a sparkling cuvée of fermented gooseberries, quince kefir, jasmine tea, and woodruff and geranium kvass that blends a series of short fermentations to achieve its fresh, sparkling profile. Gooseberries are fermented with pichia kluyveri yeast before being enriched with organic gooseberry juice. The gooseberry wine lends acidity, and fermentation by pichia kluyveri yeast provides aromatic floral notes. Quince water kefir lends the fruit-forward palate, and organic, cold-brewed jasmine tea accentuates the aromatics. Finally, caramel malt is inoculated with sourdough starter and then infused with geranium and foraged woodruff to lend autolytic, toasty-brioche notes found in Champagne. The various layers are blended together in stainless steel tanks before being carbonated. Passing Clouds is dry, complex, and floral; sparkling and refreshing with bright acidity and a heady nose of flowers, honey, and ripe fruits.

Serve chilled. Pairs well with aromatic dishes, seafood, white rind cheese. $34.99

FINE WINE TASTING @ SAVOUR WITH GORDON ALEXANDER, OWNER OF TERROIR WINES

GORDON ALEXANDER, WINE MERCHANT & OWNER, TERRIOR WINES, works directly with winemakers here and abroad, innovators that cherish their land, producing wines expressing the sense of place with minimal intervention in the vineyard and cellar. Most are organic, some biodynamic, all sustainable. Wines that are as unique and individual as their makers. 

Lauverjat Moulin des Vrilleres Sancerre 2018, Nantes France

Varietal: Sauvignon Blanc Alc. 1.25%

The Anneau family has been producing wine in the Nantes region for four generations. They now own 30 hectares around the remarkable 17th-century Château de La Vrillère in the village of Chapelle-Basse-Mer. The Chateau itself was declared a French Historic Monument in 2001. Grapes are hand-harvested, then gently crushed using a pneumatic press. The white Moulin des Vrillères Sancerre is a blend of grapes from different Sauvignon parcels. It pours a beautiful pale clear yellow color. It carries notes of herbs and gooseberries on the nose. Medium-bodied, crisp and dry, it has flavors of smoky minerals, juicy tangy citrus and pink grapefruit on the finish.

Pairs well with seafood, spicy food, and Japanese cuisine. $19.99 for 375 ml bottle

Balnea Verdejo 2020, Valladolid, Spain

Varietal: Verdejo Alc. 14.5%

Balnea’s vineyards are located in La Seca, in the south of Valladolid, on a high altitude plateau. The soil is rich in limestone with a gravel sublayer beneath. The low fertility of the soil and the scarce rains combine to produce low yields of highly concentrated grapes. The Continental climate, with extreme temperature differences between day and night, is the reason for the unique balance achieved in these grapes. Harvest is done 100% manually. Fermentation takes place at a very low temperature – 9 degrees F for 8 weeks. (Industry standard in this region is 15 degrees for 1-2 weeks.) This technique is unique to this winery and contributes to the structure and aromatics of the wine. Only native yeasts are used. Careful battonage is carried out to maximize contact with the lees. Maria Jesus Hernandez, one of the few female winemakers in the region, is Balnea’s winemaker. Maria’s family have had vineyards for many generations, but Maria is the first winemaker in the family. Her verdejo, made from 25+ year old, estate grown vines, is clean with citrus and herbal notes on the nose, and a creamy and delicate body.

Pairs well with shellfish, salads and spicy food. $14.99

Diamant de Loire Chardonnay, Loire France

Varietal: Chardonnay Alc. 11.5%

Joseph Verdier founded a negociant firm in 1927 in Nantes. In 1965 the firm affiliated with Groupe Tallian, a large Bordeaux domaine and negociant firm, which provided capital for Verdier to build their own vinification and bottling plant in Montreuil-Bellay in the heart of the Loire. In the mid-1990’s, Verdier bought a bottling center in Saumeur, which is their main facility today. This facility is Ecocert-certified as part of Verdier’s move toward fully organic viticulture and winemaking. Today Verdier produces some 8 million bottles annually and sells in 30 countries. It is one of the most important producers of Loire wines at the intersection of quality and value. The wines under the Diamant label are pure, precise and great examples of varietal clarity. The Chardonnay is full of fruit notes. It has minor hints of tropical fruits (banana and pineapple) followed by crisp apples and citrus, along with great minerality. All this is nicely balanced with a fine structure that you can feel in the mouth in a long and elegant finish.

Pairs well with oysters, fried/grilled chicken and seafood. $14.99

Castro Ventosa Bierzo Mencia Joven, Bierzo, Spain

Varietal: Mencia Alc. 14%

Castro Ventosa was founded by the Perez family in 1752 and the family has owned the estate ever since. The Perez family owns 75 hectares of Mencía vineyards in Bierzo, making them the biggest owners of this varietal within the Bierzo D.O. The Bierzo appellation is made of 5,000 hectares with 2,500 planted with white varietals and 2,500 planted with Mencía; there are 5,000 landowners within the appellation. Raúl Pérez, who now runs the winery, is a figurehead for Bierzo wines in Spain. Castro Ventosa produces three different Mencía; Valtuille, El Castro de Valtuille and El Castro de Valtuille “Joven Mencia.” Mencía is indigenous to Bierzo, and some suspect that it is an ancient clone from Cabernet Franc. When it comes to the grape Mencia, Raul Perez is obsessive; no detail is overlooked in his quest to accurately express the purity of true Mencia in the region. Fermented in stainless steel tanks and then left in oak vats for 3 months, the wine produced is fresh and without a ton of oak characteristics despite the malolactic fermentation. On the nose, herbal notes mix with wild berries. On the palate, it is medium-bodied and fruit forward with notes of graphite and good acidity.

Pairs well with venison, poultry, or veal. $17.99

Vivier Pinot Noir 2017, Sonoma Coast, California

Varietal: Pinot Noir Alc.14.5%

A Burgundian by birth, Stephane Vivier grew up in Meloisey, a village of about 300 in the canton of Ladoix-Serrigny, near the ancient Burgundian capital of Beaune. There, Stephane was first introduced to wine and winemaking at the feet of an elderly neighbor whose family had been making wine for centuries. After obtaining degrees in viticulture and enology from Université de Bourgogne in Dijon, Stephane worked in Switzerland, Sonoma and New Zealand. Vivier returned to Sonoma in 2002, and today, he is one of the United States’ most noted practitioners of the art of Pinot Noir. The nose of his Sonoma Coast Pinot Noir is an earthy mix of Asian spice, violet, and rose petals with hints black cherry and mocha. On the palate, the same complexity of flavors returns with layers of delicate red fruit, floral notes and touches of a gentle earthiness and minerality.

Pairs well with pork, duck, veal or lamb dishes. $42.99

Nomade Cabernet Franc 2017, Mendoza, Argentina

Varietals: Cabernet Franc Alc. 14%

Trained as an engineer, Tomas Achaval spent his early career working with multinational corporations across the globe. Eventually selected by LVMH to manage Moet & Chandon’s operations in Argentina, he fell in love with the world of wine, and soon decided to make his life’s passion his life’s work. Under the Nomade brand, Achaval has collected a group of vineyards from some of Argentina’s finest terroirs. He quickly zeroed in on the Uco Valley as some of the finest terroir in Argentina. The Valle de Uco is a key winegrowing region in the province of Mendoza. An hour’s drive south from the city of Mendoza, it is home to some of the region’s finest vineyards and is sometimes referred to as “the Napa Valley of Argentina.” The Nomade Cabernet Franc is hand-harvested and vinified with minimal intervention. It has a floral

nose with hints of fresh herbs. On the palate, it has medium-high acidity that is a good balance with dark fruit flavors, and notes of plum and pepper.

Pairs well with goat cheeseburgers, roasted pork. $14.99

FINE WINE TASTING @ SAVOUR WITH GARY BALLARD OF MS WALKER

Founded in Boston in 1933, M.S. Walker is a 5th-generation, family-owned wine and spirits importer and distributor, a spirit bottler, and a national supplier. They serve restaurants and retail shops throughout the Northeast, with direct operations in Massachusetts, New York, New Jersey and Rhode Island and brokerage operations in Maine, New Hampshire and Vermont.

Gary Ballard of MS Walker has been with us many times and is always a favorite! He has many years of experience, first in the restaurant business and now in the wine business. He has travelled all over the world with the distribution companies he has represented, so feel free to ask questions! He is very knowledgeable and engaging.

WINES

Novellum Chardonnay, Rousillon, France

Varietal: Chardonnay Alc.13%

 Chardonnay shows up in some remarkable places but few as breathtaking as the Roussillon, where the Pyrenees meet the Mediterranean. From vineyards just a stone’s throw from the beach and within view of the historic Mont Canigou, Eric Solomon and Jean-Marc Lafage have created Novellum, a refined, aromatic and elegant Chardonnay that is aged in tank and neutral French barrels. This is an area of Roussillon where Jean-Marc and Eliane Lafage have some Chardonnay planted near the Mediterranean that makes a remarkably complex and mineral version of the variety. A small percentage is aged in barrel – usually less than 30%. The remainder of the wine is aged in tank on the lees of Viognier. The 2020 Novellum Chardonnay has a medium gold hue as well as a rich, powerful bouquet of caramelized lemon, honeyed almonds, candle wax, and toasted bread. Rich, medium to full-bodied, beautifully textured, and balanced, it is one of the best values in Chardonnay that you can find.

Pairs well with seafood, roasted chicken and creamy polenta. $ 14.99

Merlin Mâcon la Roche Vineuse 2019, Burgundy, France

Varietal: Chardonnay Alc.14.5%

Olivier Merlin and his wife, Corinne, began in 1987 by renting 4.5 hectares. Since then, Olivier has been buying the property in stages as well as adding new vineyards such as those in St Véran. Olivier has established a reputation as one of the region’s most dynamic growers, a reference point for the Mâconnais. The whites demonstrate his exceptional winemaking talents, and the potential of “lowly” appellations. They are frequently taken for Côte d’Or wines if tasted blind. The single-vineyard wines, including Mâcon-La Roche Vineuse, get 18 months barrel-ageing with 30 to 50% new wood. This old-vine cuvée is fermented and aged for the first year in oak, before moving to tank to avoid drying out. The nose is surprisingly serious, with some spicy oak reduction. It’s quite peachy and rounded initially on the palate, before a pleasing salinity arrives and tightens up the finish. It’s best to drink from now until 2025.

Pairs well with sushi, shellfish, and grilled chicken. $ 25.99

Kloster Neustift Abbazia di Novacella, Alto Adige, Italy

We have two selections from this southern Tyrolian winery. As archaeological finds prove, viticulture has been practiced on the sheltered slopes of the Isarco Valley for well over 2500 years. The Kloster Neustift is one of the oldest active wineries in the world, producing wine since 1142. Through donations, foundations, purchases and exchanges, the monastery acquired a sizeable portfolio of vineyards over the centuries; to this day the monastery is surrounded by vineyards. However, since the monastery was temporarily dissolved at the beginning of the 19th century, not all the vineyards are owned by the monastery. But the growers still deliver most of their grapes to the monastery, where they are processed into expressive wines in the monastery’s own winery. White and red wines that come from their own vineyards, whose fermentation and subsequent maturation take place only in steel tanks, in order to maintain the characteristics of fragrance and freshness that have always distinguished the region.

Kloster Neustift Abbazia di Novacella Kerner

Varietal: KernerAlc. 13.5%

Kerner is grown as a frost-resistant grape variety especially at higher elevations in the Val Venosta and Isarco Valley. This cross between Schiava (Vernatsch) and Riesling owes its name to the German poet Julius Kerner. The sleek, spicy white also reveals itself to be poetic in the glass when its subtle tones of nutmeg emerge from the abundance of aromas and its fine, fruity bouquet reveals the great potential of this wine. The Novacella Kerner is greenish yellow in color. Peaches, apricots, and tones of tangerines are present on the nose. It is very lively, juicy, and sleek on the palate, with a mineral-rich finish.

Pairs well with fish, spicy dishes, and vegetable dishes. $24 .99

Kloster Neustift Abbazia di Novacella Pinot Nero

Varietal: Pinot Nero Alc.13%

The Pinot Noir or Nero grape is considered one of the noblest red grapes worldwide and is another variety that belongs to the so called “international” grapes of French origin, but widely cultivated around the world. Pinot Nero is a difficult grape to grow and wine to make, and it is a challenge for every winemaker with results varying from vintage to vintage and area to area. The Pinot Nero is a grape variety very sensitive to the terroir, producing different interpretations depending on where the grapes are grown and the land and soil characteristics. In Italy, the grape is cultivated in the north, mainly in Trentino Alto Adige. The Novacella Pinot Nero is brick-red in color. A nose with aromas of sour cherries, red berries, plums, and forest floor is followed by an elegant, velvety, and juicy palate.

Pairs well with charcuterie, salmon, and mushroom risotto. $ 25.99

Bodegas Mas Que Vinos, Ercavio Tempranillo Viñas de Meseta 2017, Toledo, Spain

Varietal: Cencibel (Tempranillo) Alc.14.5%

Some very impressive wines have been coming from Spain recently, such as the bottles coming out of Bodegas Mas Que Vinos – arguably one of the country’s hottest producers right now. Bodegas Mas Que Vinos beautifully demonstrates what great shape their country’s wine scene is in right now. The winery has been running since the 1850s with the Rodriguez family at the helm. However, the new millennium called for a serious update of the way the winery was run. So Gonzalo Rodriguez, along with two friends, set up a new Mas Que Vinos winery. The three established new vineyards and improved the old ones and are producing modern Spanish wine from the amazing native grape varietals that flourish on their sun-baked land. This Tempranillo is a lot more fruit driven than most, with silky tannins due to careful winemaking and no use of oak. On the nose it has aromas such as violets and fresh berries, hints of chocolate and white pepper spice. The palate is pure, soft and very well balanced with a touch of creamy texture followed by a spicy finish. It’s one of those wines that will be perfect on its own but will also match well with food.

Pairs well with roast beef, garlic chicken, and prosciutto. $14.99

La Rioja Alta Viña Alberdi Rioja Reserva 2018, Rioja, Spain

Varietals: Tempranillo Alc. 14.5%

One of the oldest wine collectives in Spain, five Basque and Rioja-based vine growers created “Sociedad Vinicola De La Rioja Alta ” in July of 1890. A year later the company changed names to La Rioja Alta, and they’ve been producing classic Spanish wines for over 120 years. Over a century of winemaking experience certainly teaches you something as La Rioja Alta is garnering some incredible press. Their young and fresh red 2018 Viña Alberdi, already a Reserva (Crianza in Spain), matured in oak barrel for two years, in new barrels for the first year and in aged barrels for the second year. 2018 was a year of lower alcohol and more freshness in the wines, and they thought the wines were not designed for the long haul; so, they didn’t produce any other wine; the only wine from 2018 is Viña Alberdi! It has a pretty nose of raspberries, cassis, fresh herbs, vanilla and sweet spices. It is medium-bodied with round tannins, a creamy and fruity-chocolatey character on the mid-palate, and a supple finish with excellent length. Tangy acidity. 100% Tempranillo. It has the potential to age.

Pairs well with cured meats, grilled chicken, and roasted lamb. $25.99
